I’m almost 70…and because of my fathers job, I grew up all over Europe and Asia…..We came back to the U.S. when I was 16….when my first child was born, I started taking in foreign exchange students… I had them for a year at a time….so my kids grew up with “brothers and sisters” from all over the globe! When each of my kids turned 16… we sent them wherever they wanted to go….one went to Africa for 2 weeks, and lived on the Serengeti with a tribe…and another went to France, another went to the Czech Republic, etc… All the exchange kids have come back several times to visit and my kids have all gone to their countries to stay with their families….so it’s an incredible bond…..my youngest is 33 now….and it’s wonderful to see ALL the children fly back and forth with their spouses and children to spend time with each other…

That’s an awesome idea. One of my favorite experiences was spending a weekend on a cattle farm in North Dakota right in the middle of winter. I learned so much.
You could just make cabins. With wood stoves they would able to cook on their own. A rustic camp/"resort" as mainly a fishing lake, think outhouses. As kids we loved it. They had RV hookups.

I am in the South as well and totally agree. What she said about gardening there is what brought me to her channel in the beginning. She grows squash and brassicas that we can only dream of. Can you imagine not having to deal with vine bores, squash bugs, and loper moths???? But, I guess I'll have to enjoy it from afar. These southern bones can't take their cold and less sunlight. No way. But, again, I LOVE her channel.
@@theIAMofME isn’t it funny how we can’t understand why people that come from tropical places and end up in Canada and our question is always but why?!?! 😢 you used to live where it was beautiful and warm and had sunny beaches but of course a lot of people come here because there is work and where you can earn a decent income and raise your children where there is no civil unrest and where it’s safe. Most come because they want a better life for themselves and their children. It always boggles my mind though. Lol! But I do love the snow and the change of seasons and we have warm homes and it’s so nice to snuggle under a bunch of down filled comforters and homemade quilts and listen to the peace and quiet. You definitely have to be from hearty stock to last here over the winter but if you make it through one you can do it again. It’s an amazing place to live and to laugh and we don’t take ourselves too seriously here either. We also depend a lot on our neighbors and our own ability to be self-reliant. We wouldn’t ask something of a neighbor that we wouldn’t turn around and do the exact same thing if they needed our help. It makes life much more enjoyable knowing you have so many friends and neighbors to share the good times and bad times with. Anyway I’m sure you have them in the south as well but it’s not like a life and death situation that it could be. Anyway you should come up and see if you just might enjoy the cold and the snow. We dress with long Johns and heavy sweaters and heavy socks and warm boots, mittens and hats and if you have all those things you’ll never be cold!!🥰❤️🇨🇦🙏🏻
In Central Alberta, we have many hours of sunshine, once past December, until fall. In the summer, we have around 10 hours of light but our summers are fairly short. We get smaller amounts of rain than some provinces.
@@leannekenyoung It sounds about like here in rural TN but without the frigid temps. Although, it does get pretty cold here. I have been to Ontario once and it was BEAUTIFUL. Sadly, that is the only time I will ever get to come because of simple choices I've made in the last two years. I'm no longer allowed in the country.
I was raised on an acreage with a milk cow, oil lamps for light, a wood stove for heat and started dating my husband at 16, married two weeks before I turned twenty. He was a big city kid, and loved my country life. While I loved his indoor plumbing and TV. Now we have 40 acres, and I long for a wood stove, oil lamps, but I still want to keep my power. Going "off grid" in minus 40 in Alberta loses its romantic appeal very quickly.
We have the same experience as you, started dating when I was 15, a sophmore in high school, hubby was a senior. That was 1967 and here it is 2023, we are celebrating 51 years of marriage! Congrats to all of us!!
I enjoy your videos so much. Not only do you share a similar lifestyle but it's like just catching up with a friend! I have enjoyed canning, gardening, farming, animals both husbandry and butchering, etc for many years. My health declined a couple years ago. And has severely limited my ability to continue. But since we are the same age I feel like I can enjoy it through you and your videos! Keep being real!

I SO agree about the importance of international travel, or travel of any kind, to open eyes and broaden horizons for kids between high school and college at a minimum. I think it makes better people and better citizens.
I am new to TH-cam (my husband has been watching videos for years and I have resisted until now!). You are one of my first channels I have subscribed to, I so enjoy watching you cook and talk about your homestead and family. My husband and I are of retirement age and have just purchased property in upstate New York where we will homestead along with our adult son. We have been "in training" on our 1 acre home in Connecticut for 18 years and are excited for our new chapter. We have raised chickens, ducks and pigs along with having a huge garden - I can and preserve as much food as possible for us and look forward to doing more of that on our new property in the future. We have always dreamed of having more land and expanding our ability to provide for ourselves, watching you is an inspiration for me! Thanks!

Hamburger gravy serve red on toast or bread or biscuits is called S.O.S. Sh.. on a shingle. 😂. Very popular in my parts with country folks and military. (Oklahoma, mother from a farm, father was a military kid)
That's more of a casserole than biscuits and gravy. More authentic biscuits and gravy is something I can and will eat any time of day, and it's cheap. When I was logging in my early 20s, during rainy seasons and just when there were no properties to log, a bunch of us would lodge together, I often referred to it as a refugee camp with folks sacked out on the floor because all of the beds were taken. Biscuits and gravy was something I fixed a lot, being the only female and the only one that knowed how to cook, I actually got "tips" from all of the men for the food I cooked. Came in at the end of a long weekend out of town one time to a house full of hungry men that wanted to know if they bought more food if I would cook it for them, because eating out was killing everybody. We reached an agreement on a fund for grocery shopping, clean up and a fee for me cooking for all of them roughnecks. They knew that the biscuits and gravy I made were good, but had no idea how good I could cook other things. They called me their personal chef. They enjoyed it so much that, when I wasn't there, they discussed renting a larger house and hiring me to cook and clean for them. Even though I'm what some folks refer to as domesticated, I didn't fall for that one, and we just continued with the original agreement. They always made fun of me in the winter months because I'd wear long johns, two pairs of jeans, a long john shirt, long teeshirt, sweat shirt and flannel shirt, two pairs of wool socks under my boots, a leather jacket, leather gloves and a hat, all wrapped around a female that was only 5'5" tall and weighed a solid 135 pounds, they said that was the biggest I had ever looked, but they couldn't believe how agile I still was with that many pounds of garments on. It takes a lot of energy to work in cold weather, even more in a cold climate area. Nothing like a wood stove to warm up beside when the work day is done.
I have carried on the family tradition of making hamburger gravy all my adult life. It is a great meal for stretching the budget. We always have primarily had it over mashed potatoes but if time is a factor we'd have it over toast. Don't know why I haven't done it over biscuits.
Love how the freeze dryer setup is so neat and clean looking - the wood is so pretty as well as the floor. Your supper looks almost as good as the girls crepes - I love crepes so nothing would beat them. LOL Enjoyed the information as it seems I know you better, now.

I was raised on a farm and we always had our own meat. So it never bothered me when we processed our meat. When my dad and stepmom moved to a farm they got a young steer to raise for meat. When it was time my stepmom couldn’t do it. They sold that steer and bought another one to process. In future years she was able to process both beef and pork. I love your channel. I’m so so happy you are doing TH-cam more.

We lived in the Northwest Territories and now 34 years in south Texas on the Gulf of Mexico. My husband is from Wisconsin and every gardener there thinks they have a green thumb because gardening there is effortless. IF you garden in south Texas and are successful you do indeed have a green thumb. Diseases and bugs are constant. So that being said I understand the benefits of growing in Canada.
Great progress on the room with the freeze dryer. Love the red on the floor. Learning a lot from your videos about homesteading. Lovely meals too. Those crepes were looking delicious.

I can relate to your children's choices about City versus Farm Life as I was born and raised for the first few years in the city and then we moved to a small farm in the Okanogan Valley. The farm life never jived for me and I missed the city. The funny thing now is however, that when I head back to the Okanagan from Vancouver I always drive out to the farm (which has since been owned by another family for the last 30 yrs) just to reminisce and look at the fabulous view we had out there. That land is in my heart. Thanks again!

Yeah those could be called dumplings or my grandmother would just take spoonfuls and drop it on to a bank baking pan and she called them dropped biscuits you don't have to form them or anything just get a spoonful and just drop it on to the pan love your channel

I have made a little cookbook for my daughter and each of her girls so they have my recipes and some of their grandmother’s, great grandmother’s and great aunt’s recipes. We live in the US but lived in Canada for 15 years. We still make favorites like Nanaimo Bars.

Hi….happy Sunday! Another snowy day this side of the Cariboo’s. I remember growing up, whenever I would go to my aunt and uncles cabin. We always cleaned the top of the cook stove with newspaper and oil….some sort of vegi oil. It looked so nice. I am excited with all the new changes to your channel and website etc. I’m happy you add to your income doing this. I am also excited for your cookbook. I will be needing one for sure. Great to see you! You are so right about the south, I had leaf footed bug on my tomatoes for the past few years and it is so annoying. I absolutely hate the humidity and I don't want to go outside during the summer, can never open up the windows in the house during the summer and basically we don't get rid of bugs, and fire ants and mosquitos are my enemies! Ugh! I don't like it too cold but I don't like it hot and humid either. California had the best climate years ago but it's not for me anymore. Enjoying your videos! Hugs and love 🤗💞🙏

I enjoy your videos. I have been viewing many homesteading TH-cam channels since I retired last year and in searching for more Canadian content was happy to come across yours. Your season is a bit shorter and colder than ours so great to have that perspective. Is it true … 11 children? Did you have a few sets of twins or adopt some? Forgive me, I can’t get my head around that….I am an only child, never had any children, and not sure how or where you would put all the stuff….clothes, dishes, bedrooms, chairs, shoes…. Your kitchen is quite tidy and not huge….how do you hide the 7 plus bodies moving around all the time! Amazing!
Hey there and welcome! Yes, we have 11 with one set of twins in there. I try to film when everyone is occupied or edit the interruptions out - sometimes there’s a lot! Lol whenever I bring the camera out I do tidy my kitchen first. My mom raised me to always have a clean house when company comes over and when I film that’s how it feels, although I do try to keep it real, sometimes I realize I’ve cleaned my kitchen but didn’t brush my hair! The way you make bread without a recipe really made me get close and personal with the feel & look of the dough. I have time now in retirement to pay attention and take advantage of the savings and the release of pent-up anger in the kneading! The recipes in my cookbooks looked so overwhelming I did not attempt and the youtube options of no-knead resulted in less than palatable results. Going back to basics with the ingredients of my recipe books and watching you cut the corners after the first rise does result in a suitable sandwich bread to satisfy my husband's need for sliced store-bought bread...thanks! I could not handle and would never want that many people in the house at one time for more than 6 hours so I am in awe of your talents and hope to benefit from more you share. If, in fact, you have any connection to Canadian Homesteaders of lesser volume needs, I would be interested in connecting!

There are so many reasons I watch you. I think I found you because TH-cam popped you into my feed. Probably because I watch other homesteading type channels, in particular Modern Homestead Alaska which I think has a similar vibe to yours. But I love that you are Canadian! I was born and raised in Southern Ontario but I have spent most of my adult life on Southern Vancouver Island. Always suburban to urban areas - never the rural farm/ranch life and frankly I have no plans to change. So, why do I watch??? I love the content, particularly cooking, storage, prepping, pantry. Those tips and skills can translate to any lifestyle. I choose you because (especially today) I appreciate and enjoy your candor and knowledge and how genuine you are. I love to watch. I have learned a lot from you and will this year try some in my raised beds. I have always canned what I can or frozen vegetables. The garden ideas is what I enjoy, the animals and the cooking.
Hugelkulture compost in bins around or in a greenhouse could help with temperature in fall spring. Good ideas on internet about no electricity greenhouses. I live in southeast US but plan to live in central US in northern Great Plains 5a area -28.9 to -26 °C (-20 to -15°F). Like to hear advantages of gardening in north. That is some snow plow you all have ❤

The girls did an awesome job with the sweet crepes. I've been considering getting a freeze dryer for over a year. I feel it would benefit the household very much. I would save on freezer space and be able to freeze dry fruits and vegetables from the garden. My husband had bariactric surgery about 15 years ago. I'll be able to make foods for him that will be more digestible. Have an awesome day.

Can't wait to see how you use your freeze dryer. Might want to get baskets or bins for the shelves, those mylar bags don't like to stand up. Even the gusseted ones have trouble. Mine domino a lot. I really like getting the resealable ones with the gussets. Easier to snack from, lol. You can vacuum seal in mason jars too using the freeze dryer, just touch the leaf in the upper leaf to access the control panel to toggle on the vacuum pump alone. I go about 1.5 to 2 minutes. Feels less wasteful to use a jar for items that will be used in the short term.

We have raised chickens, ducks and pigs along with having a huge garden - I can and preserve as much food as possible for us and look forward to doing more of that on our new property in the future. Hamburger gravy serve red on toast or bread or biscuits is called S.O.S. Sh.. on a shingle. 😂. Very popular in my parts with country folks and military. (Oklahoma, mother from a farm, father was a military kid)

That's more of a casserole than biscuits and gravy.
More authentic biscuits and gravy is something I can and will eat any time of day, and it's cheap.
When I was logging in my early 20s, during rainy seasons and just when there were no properties to log, a bunch of us would lodge together, I often referred to it as a refugee camp with folks sacked out on the floor because all of the beds were taken.
Biscuits and gravy was something I fixed a lot, being the only female and the only one that knowed how to cook, I actually got "tips" from all of the men for the food I cooked.
Came in at the end of a long weekend out of town one time to a house full of hungry men that wanted to know if they bought more food if I would cook it for them, because eating out was killing everybody.
We reached an agreement on a fund for grocery shopping, clean up and a fee for me cooking for all of them roughnecks.
They knew that the biscuits and gravy I made were good, but had no idea how good I could cook other things.
They called me their personal chef.
They enjoyed it so much that, when I wasn't there, they discussed renting a larger house and hiring me to cook and clean for them.
Even though I'm what some folks refer to as domesticated, I didn't fall for that one, and we just continued with the original agreement.
They always made fun of me in the winter months because I'd wear long johns, two pairs of jeans, a long john shirt, long teeshirt, sweat shirt and flannel shirt, two pairs of wool socks under my boots, a leather jacket, leather gloves and a hat, all wrapped around a female that was only 5'5" tall and weighed a solid 135 pounds, they said that was the biggest I had ever looked, but they couldn't believe how agile I still was with that many pounds of garments on.
It takes a lot of energy to work in cold weather, even more in a cold climate area.
Nothing like a wood stove to warm up beside when the work day is done.

I have carried on the family tradition of making hamburger gravy all my adult life. It is a great meal for stretching the budget. We always have primarily had it over mashed potatoes but if time is a factor we'd have it over toast. Don't know why I haven't done it over biscuits.
Love how the freeze dryer setup is so neat and clean looking - the wood is so pretty as well as the floor. Your supper looks almost as good as the girls crepes - I love crepes so nothing would beat them. LOL Enjoyed the information as it seems I know you better, now.

I was raised on a farm and we always had our own meat. So it never bothered me when we processed our meat. When my dad and stepmom moved to a farm they got a young steer to raise for meat. When it was time my stepmom couldn’t do it. They sold that steer and bought another one to process. In future years she was able to process both beef and pork. I love your channel. I’m so so happy you are doing TH-cam more.

We lived in the Northwest Territories and now 34 years in south Texas on the Gulf of Mexico. My husband is from Wisconsin and every gardener there thinks they have a green thumb because gardening there is effortless. IF you garden in south Texas and are successful you do indeed have a green thumb. Diseases and bugs are constant. So that being said I understand the benefits of growing in Canada.

I can relate to your children's choices about City versus Farm Life as I was born and raised for the first few years in the city and then we moved to a small farm in the Okanogan Valley. The farm life never jived for me and I missed the city. The funny thing now is however, that when I head back to the Okanagan from Vancouver I always drive out to the farm (which has since been owned by another family for the last 30 yrs) just to reminisce and look at the fabulous view we had out there. Yeah those could be called dumplings or my grandmother would just take spoonfuls and drop it on to a bank baking pan and she called them dropped biscuits you don't have to form them or anything just get a spoonful and just drop it on to the pan love your channel

Hi….happy Sunday! Another snowy day this side of the Cariboo’s. I remember growing up, whenever I would go to my aunt and uncles cabin. We always cleaned the top of the cook stove with newspaper and oil….some sort of vegi oil. It looked so nice. I am excited with all the new changes to your channel and website etc. I’m happy you add to your income doing this. I am also excited for your cookbook. I will be needing one for sure. Great to see you! You are so right about the south, I had leaf footed bug on my tomatoes for the past few years and it is so annoying. I absolutely hate the humidity and I don't want to go outside during the summer, can never open up the windows in the house during the summer and basically we don't get rid of bugs, and fire ants and mosquitos are my enemies! Ugh! I don't like it too cold but I don't like it hot and humid either. California had the best climate years ago but it's not for me anymore. Enjoying your videos! Hugs and love 🤗💞🙏

I enjoy your videos. I have been viewing many homesteading TH-cam channels since I retired last year and in searching for more Canadian content was happy to come across yours. Your season is a bit shorter and colder than ours so great to have that perspective. Is it true … 11 children? Did you have a few sets of twins or adopt some? Forgive me, I can’t get my head around that….I am an only child, never had any children, and not sure how or where you would put all the stuff….clothes, dishes, bedrooms, chairs, shoes…. Your kitchen is quite tidy and not huge….how do you hide the 7 plus bodies moving around all the time! Amazing!
Hey there and welcome! Yes, we have 11 with one set of twins in there. I try to film when everyone is occupied or edit the interruptions out - sometimes there’s a lot! Lol whenever I bring the camera out I do tidy my kitchen first. My mom raised me to always have a clean house when company comes over and when I film that’s how it feels, although I do try to keep it real, sometimes I realize I’ve cleaned my kitchen but didn’t brush my hair! The way you make bread without a recipe really made me get close and personal with the feel & look of the dough. I have time now in retirement to pay attention and take advantage of the savings and the release of pent-up anger in the kneading! The recipes in my cookbooks looked so overwhelming I did not attempt and the youtube options of no-knead resulted in less than palatable results. Going back to basics with the ingredients of my recipe books and watching you cut the corners after the first rise does result in a suitable sandwich bread to satisfy my husband's need for sliced store-bought bread...thanks!
I could not handle and would never want that many people in the house at one time for more than 6 hours so I am in awe of your talents and hope to benefit from more you share. If, in fact, you have any connection to Canadian Homesteaders of lesser volume needs, I would be interested in connecting!
Chelsy I loved your video and learning a little more about you and Dan. Kids are great and I would like a whole big bunch as well. Unfortunately my wife to be is from China and we were about to be married 3 years ago. However this stupid Covid virus got in our way. Now we will just work around that and hopefully next year will be the year. Lots of work but the rewards of growing and making your own food is super and totally yummy.

There are so many reasons I watch you. I think I found you because TH-cam popped you into my feed. Probably because I watch other homesteading type channels, in particular Modern Homestead Alaska which I think has a similar vibe to yours. But I love that you are Canadian! I was born and raised in Southern Ontario but I have spent most of my adult life on Southern Vancouver Island. Always suburban to urban areas - never the rural farm/ranch life and frankly I have no plans to change. So, why do I watch??? I love the content, particularly cooking, storage, prepping, pantry. Those tips and skills can translate to any lifestyle. I choose you because (especially today) I appreciate and enjoy your candor and knowledge and how genuine you are. I love to watch. I have learned a lot from you and will this year try some in my raised beds. I have always canned what I can or frozen vegetables. The garden ideas is what I enjoy, the animals and the cooking.
Hugelkulture compost in bins around or in a greenhouse could help with temperature in fall spring. Good ideas on internet about no electricity greenhouses. I live in southeast US but plan to live in central US in northern Great Plains 5a area -28.9 to -26 °C (-20 to -15°F). Like to hear advantages of gardening in north. That is some snow plow you all have ❤

The girls did an awesome job with the sweet crepes. I've been considering getting a freeze dryer for over a year. I feel it would benefit the household very much. I would save on freezer space and be able to freeze dry fruits and vegetables from the garden. My husband had bariactric surgery about 15 years ago. I'll be able to make foods for him that will be more digestible. Have an awesome day.

Can't wait to see how you use your freeze dryer. Might want to get baskets or bins for the shelves, those mylar bags don't like to stand up. Even the gusseted ones have trouble. Mine domino a lot. I really like getting the resealable ones with the gussets. Easier to snack from, lol. You can vacuum seal in mason jars too using the freeze dryer, just touch the leaf in the upper leaf to access the control panel to toggle on the vacuum pump alone. I go about 1.5 to 2 minutes. Feels less wasteful to use a jar for items that will be used in the short term.
