I NEEDED this…seriously. I am on a mission to switch everything to whole grains. Any chance I get to include barley in the mix is a must make for me. My husband’s grandmother was famous for her butterscotch oatmeal cookies with orange extract instead of vanilla. I am determined to convert her recipe using soft wheat, barley and freshly flaked oats or even barley flakes. Thanks for sharing! 👍💕
I too am trying to convert everything. Some have a bigger learning curve than others even with following a conversion chart. I would use a mix of hard white and soft white to get more of an all purpose flour. More soft white than hard white, the high gluten in the hard white will change the cookie, if you use all HW.
@@InTheKitchenWithDinah Hi Dinah, where I live I can get hard white, spelt, einkorn, emmer, rye and kamut. No soft wheat berries unfortunately. What grain would give the best results in baking pastry and cookies instead of soft wheat please?

Spelt should work. It may take more flour but see how the consistency is. Maybe do a test bake with 1 cookie and add more flour as needed
