  • The history of eating one's fellow man is rich with culinary tradition and innovation, carried on in no small part by Dr. Hannibal Lecter. In this pivotal scene, he gives a fellow killer a taste of his own medicine, so to speak - if, at the time, he had medicine in his bloodstream, because he's eating his own leg. So to speak.     If I remember correctly, Janice Poon, the food stylist of Hannibal, mentioned in her connoisseur book that you could use foil instead of the green lotus leaves.

      That would actually make sealing of the pork before covering with clay even easier, there are so many flaps and holes on the lotus leaves compared to a normal foil

      The problem is the leaves generally require repeated drying and reconstitution to be properly cleaned of the tea like flavour.

      Just simple genetics and chemistry. There's nothing at all horrifying about it. The similarities were researched long ago by the medical industry to find out what animal organs could be best used to make prosthetics like hear valves, and it turned out to be pork.

    I’d love to see more longpig recipes in the future. I generally pack my meat in a casing of salt and egg white to achieve this effect. Works wonders for cooking a whole thanksgiving turkey in two hours.

    BTW to others who didn't know, the writers have indeed confirmed that, Bedelia's leg in the end scene, was cooked by Hannibal, but they left it as an open ending for everyone to create their own theories.
    But remember Hannibal before cooked Gideon's leg? He let Gideon feast on acorns, sweet wines and oysters to enhance the flavor of his meat.
    Hence the scene of Bedelia eating oysters, acorns and marsala, was a huge hint at the ending scene, that Bedelia was gonna get her leg cooked by Hannibal.
    I was watching videos of chicken brining but well, u know the drill.

    This is one of my favorite videos of yours! I would love to see another Hannibal special from you, but where you take human meat (pork) and try to transform it like Hannibal seems to do. He makes a lot of dishes throughout the series that don't involve any pork whatsoever, like fish and chicken and other things.     TIP: put marrow bone into a simple salt brine and put in fridge over night. The salt will leech the blood out of the marrow leaving it lovely and perfectly white once roasted rather than brown/black.     i just watched hannibal recently and the whole time i was watching it i couldnt help but think, "man babish MUSTVE made a video on at least ONE of these dishes" and i am SO happy with all the cannibalism jokes that i KNEW would be in here. i had imagined this video in my mind before i even knew it existed haha
