    Hello, I am Spanish. The truth is that I am surprised, you have understood Spanish cuisine and your recipes are very accurate. I am giving you a couple of advices about this recipe: first, keep the lentils in water for a whole night before cooking them, it will be easier to cook. Second, buy lentils whole lentils, with skin, and buy always the smallest lentils that you have available, they are Better. And you can add a handful of rice at the end of the cooking.

    This channel just randomly popped into my suggested, and I’m glad it did! i studied abroad with a few friends in college and we lived right in the heart of Madrid, bout a three minute walk away from Puerta del Sol. I absolutely loved the city of Madrid; the lively and bustling streets, the incredible architecture, the beautiful parks like Retiro and Casa de Campo, and of course the clubs which we spent way too many weeknights and way too much money in, to the detriment of our grades and wallets hahaha.
    The one thing about Madrid that I didn’t find too be too interesting was a lot of the Spanish food I had tried; tortillas des patates just tasted bland to me, the bocadillo des calamari was much the same, and jamon iberico, while good, just seemed like a chewier prosciutto to me (could very well have been that I didn’t try good/expensive of enough cuts of it however). A few things I did love however were the chorizo, the croquetas, the sangria and the cochanillo asado I tried at Restuarante Botín, which was absolutely incredible.
    I have since talked to people (have a coworker back in the states whose from Spain, as well as a British friend we made abroad who we actually just saw for the first time in years!) who say that I simply didn’t try enough/the right dishes, and that Madrid doesn’t have a lot of the great regional food Spain has to offer, so I hope to try a few of this channel’s recipes to give Spanish cuisine a fair second shot. This dish looks great, if anyone has any recommendations for others, please feel free to let me know.

    I believe that the INQUISITION should be restored and thus punish all those who fill their plates with sauces. I have always been struck by the number of sauces offered in restaurants in the United States, everything ends up tasting the same, it happens a bit like Mexican food, you don't know if you are eating chicken, beef or pork... a separate case and Unfortunately, I have also seen that in some places in Europe, it is the craving for Parmesan, whatever the dish, they fill it with Parmesan, forgetting that Parmesan makes sense to enhance certain flavors in certain dishes, but what does not makes sense is that everything tastes like Parmesan. Fortunately, in my native Galicia, the only sauce in a restaurant and you must specifically ask for it is TABASCO and when you see someone pour that sauce on their plate, you already know that it is someone who has no taste for food.

    Just made this dish as I had a green and red bell pepper that were starting to go soft and wanted to use the 2 cups of vegetable broth I made (ur recipe & 3cps water). When I order my Bomba and Valencia rice, I also order chorizo, but it's the kind that dried and you slice and snack on it. Doubt I could get a "chorizo" no-meat sausage in US. I'd say that that sausage did nicely flavor the dish, but the pieces of sausage (cooked) tasted weird, so I might take them out after cooking next time. 25 minutes and lentils perfect, gold potatoes pretty soft, so maybe set timer add them after lentils simmer for 10 minutes. Muy F'n Bueno. LOL

      You would have to soak the chickpeas overnight and then boil the following day for 1 to 2 hours or until tender, at that point the vegetables will get overcooked, so just cook the chickpeas apart and then add to the stew, about 1 cup dried will work :)

    A nice dish! If I do that, then I will boil the lentils separately in water and only add them to the stew at the end. This allows me to ensure that the lenses are soft. The salt in the broth prolongs the cooking time of legumes. If you cook everything together, as shown, there is always the danger that vegetables and potatoes are already very soft, but the lentils are still hard.

    • @crumbtember
      @crumbtember ปีที่แล้ว

      I saw an update on the science of salt's effect of legumes as they cook, apparently salt actually makes them cook a little faster and become creamier, as well as helpings beans from splitting. Maybe it's not universal though or the test was flawed tho, hehe!

      Don't knock it if you haven't tried it. Many plant based meat substitutes are quite good and tasty, and do a good job of approximating the original meat source. Many people are getting away from animal protein, especially beef.
