For the first fry if you’re using a thermometer I’d say from 180 degrees C, until the chicken is cooked. Then remove and strain the particles so they don’t burn in the oil. Then raise temp to 220 deg C and fry for 1-2mins at max. Then remove. Hope this helps

Try use potato starch ( tpg kentang), instead. Minyaknya lebih jernih, tak cepat hangus berbanding guna tpg jagung.
