  • How to: Malaysian Crispy Buttermilk Chicken 🍗
    Another Malaysian favorite for sure. The golden brown crispy fried chicken pieces tossed in a buttery, aromatic, and sweet milky sauce with a hint of heat definitely make this dish a best-seller in many local restaurants. It goes perfectly with a hot bowl of rice.

    I miss Malaysian food from my years living there. Tried making this recipe today and it turned out amazing. Didn’t know it was so easy. With the extra heat, turned out better than Little Wok Kitchen I used to go to years ago.
    You’re the real deal bro. Well deserving of your Uncle title. Thanks for helping bring back some divine food memories.

    Wish you can put the amout or scale or spoon of the ingredients cuz I donno how to agak2 especially the butter and evaporated milk😭 but I do know you are a great chef, I always watch your cooking since I was a teenager.

    Buttermilk has the tangy lactic acid that tenderises the meat by breaking down the tendons and ligaments of the meat. It looks simply delicious and absolutely scrumptious!

    Looks really great. Don't really like deep frying mostly coz of all the oil splattering the kitchen. I air-fry instead, but of course can't achieve the same crispiness.
    Btw, I count 15 times Chef Sherson says 'nice' in this video 🤣

      You can make your own evaporated milk, just simmer milk until it reduces about half and strain out the solids.

    Noice, Chef! What's the best substitute for the evaporated milk? Coz it's not my staple pantry stuff. Could it be regular milk? Coconut milk? Cooking cream?

      You can sub it with a mixture of cooking cream and milk. Coz if you just use milk it won’t be as creamy. But if you just use cream it’ll be too thick. So a mix of both would give you the best substitute. Enjoy!

    Used real butter not buttercup or margarine, some malaysian mistaken "buttercup" as butter.

      Sugar is better than condensed milk imo, have tried both

      condense milk will make the dish alittle too creamy and the sweetness of condense milk is very intense. I prefer using sugar and evaporated milk :)

      I grew up saying flour like this. As a young adult, I watched a lot of chef from other English speaking country say flour like flower, I got accustomed to it being pronounced like that. One day, I went to my friends house and she had made some brownies. I asked her the recipe, and when she said 'flah', I had to think for a moment what she was saying, and I grew up learning to say it like that. I can understand your confusion.
      Also, the weird this is, I recall back in school, when we learned English, the teacher taught us about homophones, and when it came to flower and flour, the teacher pronounced it differently. It doesn't make sense.

      buttermilk here is the name of the dish, which combines butter and milk. it has nothing to do with the actual buttermilk.
