    EVOO (cold-pressed) is what we want.
    6 Tips for Recognizing Real EVOO
    How do we know if our oil is the real thing and not part of the olive oil fraud?
    1. Do not buy light olive oil or a blend; it isn’t virgin quality.
    2. When EVOO costs less than $10 a liter it may not be authentic oil.
    3. Real oils are sold in dark bottles, as this protects the oil from oxidation. Look for that.
    4. Look for a seal from the International Olive Oil Council (IOC)
    5. Look for a harvesting date on the label.
    6. It can get old and rancid. A simple test for a good oil is to taste a little on a spoon. Not rancid, the real oil will have a fruity taste in the front of your mouth and a peppery taste in the back of your mouth. Then you know it is not a fake olive oil.

      With Kousa Mahshi we stuff the zucchini with raw meat then let it cook--there is no onion or garlic in the kousa itself. However, for the shish barak we like to infuse the meat with the onion, garlic, and spices so you get a cohesive flavor with each bite.

      These two don’t seem very knowledgeable or intelligent et all, and for sure any “councils” in America are corrupt and “mandate cancers” so until that changes (which it won’t except to get worse) pretending that any label or council means much is as ignorant as these two yayas….fresh anything and everything is the only way to be healthy, grow your own food, or purchase fresh food at ALL of your local farmers markets!

    I agree that STORING olive oil in the fridge isn't a good idea, but several people say putting a SMALL SAMPLE in the fridge overnight is a good test, because the good stuff will start to congeal / solidify, and the bad stuff will not change in consistency. Just a test. Maybe others have heard differently, but this is what I've heard from several sources.

      You're right, genuine extra virgin olive oil will congeal/go cloudy in the bottle and when it gets back to room temperature will go back to normal.
      I used to deliver food around the southwest of my country (UK) for a few years and it was really surprising the number of chefs who would refuse delivery of the olive oil because it was cloudy. Tells me they're not too clued up on what they're doing.
      The company I worked for stored it in the ambient store, not the fridge.

    The quality of oil is determined by the quality of olives. If they are fresh and not sat around starting to go bad the oil is fresh and clean tastes like olives. I prefer oil from the black ripened olives.

    Fantastic segment... as for OO in skincare product's, a fun fact is that prior to the Arab invention of soap, OO was used as a skin surfactant/cleanser in ancient times.

      Ancient times? Butchers, and cooks never stopped using evoo because soap destroys our cutting boards and carbon steel/cast-iron pans. Low tech often beats high tech.

    I was hoping you would try the Persian one. Years ago I worked with people from Iran. I fell in love with their culture. Farsi is a beautiful language in my opinion.

    Select your olive oil only using objective standards. You cannot tell the quality by the label, or smell, color, stamps on label, product origin. Your supermarket maintains fridge-like temperatures so look to see if that oil you think is extra virgin has congealed in the bottle. Buy an oil with the highest smoke point bc if your oil burns it rapidly degrades. For me, first pass coconut oil has the highest smoke point, avocado and virgin olive oils are next. Supermarkets keep temperatures fridge-like so the better oils will congeal in the supermarket. First pass coconut oil will congeal on the supermarket shelf. NEVER judge a product to be high quality bc of its high price otherwise only thing a crook selling a bad product needs to do is raise his price.

    One honourable mention is the historic and natural Olive Oil soap from Aleppo known as "Saboon Ghahr". Chemistry free and still produced in the same traditional historic manner. There are other productions however the ones from Aleppo are genuine.

      I use Saboon Ghar (صابون غار) all the time ever since I discovered it in Aleppo, it gives such a lovely gentle aroma and it’s a natural traditional product with a very long history.

      I should also mention that authentic laurel soap / saboon ghar should be brown-ish green on the outside and bright green on the inside (you can tell by cutting a bar in half), and also when you use it it should NOT make suds or foam. Modern mass-produced soaps often use chemical additives to make it extra sudsy, but traditional soaps are usually only slightly sudsy or not sudsy at all, depending on the type of oil used to make the soap (traditional olive oil based soaps are not sudsy)

    I loved this video and can't wait for the next. Questions for next video. Can an olive oil be rancid even if it doesn't taste or smell rancid? Is there a way to tell when you cannot taste or smell the rancidity? Can you also discuss PURE, LIGHT and EXTRA VIRGIN and what they are best used for? Thank you.

      If it is authentic extra virgin olive oil, it will taste rancid when it gets old. If it is fake olive oil, it is harder to tell, because they add a lot of chemical solvents that eliminate odor and neutralize the flavor. They do this to increase the shelf life, and hide the flavors of their subrate mixed up oils. Extra virgin means it is cold pressed right after harvest. The words "pure" and "light" are more often gimmicky terms that mean nothing. They are unregulated terms, sort of like how they use the words "all natural" to describe food even though it is not natural nor organic.

    The oil in the store like this is probably very expensive 😢I try to get the bottle that is from one country not lots of different country ! Even the one made in one country is more expensive then the others 😢I do frying in coconut oil and cooking with avocado and the rest with olive oil , every thing that is little sauté and over food and salad 🤷🏼‍♀️

    Olive oil is the healthy option if you're restricted to only vegan oils but if you dont have any food restrictions definitely go for tallow, lard or ghee to maintain good health. Enjoy!

    Actually the best olive oil I tasted in my life has been from Portugal. Italy has the oil market in its hands and there are some Italian oils that are also very good. And I don't trust the quality of Turkish oils.

    He’s incorrect about one thing. Cooling olive oil will tell quality. The more buttery the better. But he’s right about it affecting the oil. It is a good test though.

      He consulted several olive oil experts before answering my questions, they all said cooking the olive oil was "evil" lol. I personally like the more peppery and grassy olive oils, but it's all an individual taste preference.

      If you like a more mellow flavor than you might like Koroneiki or the Arbosana- they are more buttery with a more delicate taste.

      If you want olive oil as a shot, get a cold pressed unfiltered variety. It will have the most polyphenols. See if you have a local grower near you.

    Please educate me on this topic,...is it okay to cook with it? One person says yes while another says no, but I know that heat during storage is bad. Also, I'm interested in buying a bottle from the website. Is it packaged in bubble wrap? Or what prevents the bottle from breaking during shipping?

    I use olive oil soap and organic extra virgin olive oil on my very sensitive skin and my eczema and acne has healed. It takes several minutes to absorb and you only need a little bit. God made what we need!!!

    You’re going to pay a big premium if you go to a specialty store for olive oil. Too expensive to be able to use every day. I’m mainly concerned with not buying fake EVOO.

    Ever hear of Terra Creta olive oil? They sell it in large tins online and apparently it’s great stuff. Can anybody verify this?

    Hi, great video! Would you say all EVOO that is certified halal and/or kosher is real EVOO? Does it depend on the quality/strictness of the certifications?

      Not all are certified. There are some small farms in California and abroad making some amazing olive oil, and they don't have all of those certifications. It helps to get to know the farmers that manufacture the oil if they are local to you. If you are buying from abroad, the certifications certainly help.

    Only problem with Middle Eastern Olive oil is a lot of them lot of their brand is they put it put it in either plastic or clear glass bottle when really they should do it either in tins Or dark glass bottle with the harvest date of course

      If they are in a plastic bottle or under $10 they are fake. It takes more than $10 to grow, harvest, press, bottle, and distribute real olive oil. No legitimate grower will put olive oil in plastic because it will turn rancid quickly from exposure to light. Best olive oils are in dark glass bottles or tins to protect them. Hope this helps!

    If you want good stuff, quit treating it like a supermarket commodity. We do olive oil somewhat the same way we do with coffee. In the case of olive oil, we buy from a lady who went to college with our daughter. Her family owns an olive grove in the Peloponnese, and it’s processed and packaged in a small local co-op. She imports and sells it online. Wonderful stuff. Knowing WHO to buy from is more important than attempting to become an olive oil connoisseur and figuring out which of the dozens of brands out there are best.

      Find out if you have farms in Canada that make it, otherwise you can ship from California, as that is the closest to you that has the best quality in the states.

    I received oo from my village in Lebanon and it is very murky, you can't see through the bottle. I don't understand why, would appreciate an answer.

      That is because it is unfiltered. Most olive oil in the market is filtered. That stuff that makes it murky is great for fighting inflammation. However, sometimes the unfiltered olive oil can be a little more bitter.

    Would have liked to know how much more expensive these fancy oils are compared with standard grocery store oil? Which would he or you use from a grocery store if heaven forbid an olive oil store was unavailable. I try to pick the ones in dark glass bottles. Would you rub your skin with regular olive oil?

      The most important things to look for on a bottle are a harvest date, a COOC label, and a dark glass bottle or tin.

      ... their store prices are $45 for a 750ml bottle. This seems a bit steep, but at the same time, I fully trust the high quality they advertise. Compared this to $14 to $20 for a store bought olive oil from big brand name olive oil manufacturers which, in most cases are likely fake, not even single sourced, diluted and rancid - what you pay is what you get. The sad truth is, there is more extra virgin olive oil on current store shelves than what's being produced. To answer your other question, I use olive olive oil on parts of my face daily, and it seem to help alleviate my dry skin issues.

      Best indication is dark glass bottle or tin, a harvest date (different than an expiration date) preferably with a COOC seal. Of course the taste and smell is the ultimate detector of what is the real deal. Sometimes have to use trial and error, and when you find what you like, just keep buying that one.

      Terra Delyssa is a great brand, the real deal and has won many awards globally. Cobram Estate is another great brand, and is bottled within 6 hours of pressing, and passes the California Olive Oil Commision standards. Excellent choices!

      Funny you ask that my father, who has a host of health problems, ground up a whole bulb of fresh garlic and mixed it with olive oil, and ate it everyday when he had Covid. Not for the faint of heart--he smelled like pure garlic for days. He recovered remarkably fast lol! I think garlic is great so long as it is fresh.
