These are found literally everywhere in the British coasts and of course, Europe. This species in particular are only rare if they're completely blue just like their American cousins can be.
I went diving in the Florida Keys yrs ago & I was shocked at how many blue lobsters there were... Their color is beautiful .. And they taste delicious...

Dispatching lobsters is the humane way to eat them. I’m disappointed they didn’t dispatch them before hand. I feel like they want to impress people with the “freshness” but they come at the expense of the lobster.
The nervous system of those things is way different to ours, and very simple. Really difficult to fit any kind of consciousness in so few neurons. Ice water likely shuts them down so much that they don't experience anything out of ordinary while they are being cut in pieces.

I'm no expert but they taste the same regardless of color. Also, the usual colors are shades of brown and green to blue, but they all turn red after cooking 👍

Also... the first stab was through the body and into to the back of the lobster's head and instantly killed it. They died in a couple seconds.
