I wonder why he scales the fish if he's going to go ahead and skin it anyways? I clean a lot of fish and it's easier to skin them if you leave the scales on. 🤔
I wondered that too, they do that because some dishes are served skin on. It's not always known at time of cleaning, what dishes they're going to prepare. So they just leave it on by default most of the time.

I honestly never thought that someone in Japan could treat a fish that way. he uses the knife like a screwdriver, he doesn't have the usual cleanliness that we are used to seeing for those who cut fish; there is blood on the fillet and instead of removing it with a napkin, what does he do? he spread it on the rest of the fillet as if it were butter on a slice of bread🤣🤣; I was disconcerted by such inadequacy🤢
Like the other person said the eyes are blown out because the fish came up very quickly from very deep. It also appears to be pretty fresh because the eyes are clear and the flesh is still fairly translucent. 😁👌
Too many worms in the grouper in our waters to eat raw. Wonder if these have less worms ? Grouper is okay cooked after soaking in milk to deworm it, pretty sure i could never eat it raw, tho🦠
Sorry my mum exactly works as a hospital cleaner and she knows exactly how important hygiene and cleaniness is. So show some respect for someone who clean up your shit and those people who cares about clean & hygiene.
