    Kashmiri Pandits are the oldest inhabitants of the state Jammu and Kashmir. Through the years, many Hindus migrated into the region from other parts of north India. These Kashmiri Hindus have their own distinctive ethnic culture. This defines their lifestyle and cuisine. Kashmiri Pandit cuisine is exquisite and extensive and includes both vegetarian and non-vegetarian dishes.
    Kashmiri Pandits introduced the use of yogurt, asafetida, and turmeric powder to Indian cuisine. Unlike Kashmiri Muslims, they usually do not use egg, chicken, garlic, onions, and tomatoes.
    Vegetarian Kashmiri Pandit Cuisine
    Vegetarian dishes in the Kashmiri Pandit cuisine include a variety of rich curry dishes with cottage cheese and a mixture of vegetables. Aubergine, potato, lotus stem, spinach, turnip, and kidney beans are some of the vegetables used. Popular vegetarian Kashmiri Pandit dishes are:
    Dum Aloo (potato roasted with yoghurt and spices)
    Nadier Palak (a combination of lotus stem and spinach)
    Rajmah (kidney beans prepared with a variety of spices and vegetables)
    Veth Tsaman (a cottage cheese preparation)
    Tsoek Vaingan (sour, tangy and spicy aubergines)
    Food Grains - Rice and wheat are the staple diet of a Kashmiri Pandit family. Sarvari and Bazbatta are rice-based dishes. Khameeri Puri is popular bread made of wheat in Kashmiri Pandit cuisine.
    Non-Vegetarian Kashmiri Pandit Cuisine
    Non-vegetarian Kashmiri Pandit cuisine is similar to its Muslim counterpart. But the taste is different because of the use of more yogurt. Also, they do not use onions, garlic, and eggs. Mutton and fish are mostly used to prepare non-vegetarian dishes. The meat is first marinated in yogurt and cooked on low heat for a long period to make it tender. There seems to be an Awadhi influence in the meat preparing technique. Some popular non-vegetarian Kashmiri Pandit dishes are:
    Methi Qeema (minced mutton mixed with fenugreek)
    Kabargah (fried ribs of lamb)
    Rogan Josh (lamb curry with yoghurt and spices)
    Tsoek Tsarvan (kidney or liver of lamb cooked delicately with assorted spices)
    Syun Aloo (spicy potato and meat preparation)

    Wazwan(Kashmiri: وازِوان) is a multi-course meal in Kashmiri cuisine, the preparation of which is considered an art and a point of pride in Kashmiri culture and identity. Then the traem arrive, heaped with rice, quartered by two seekh kababs and contains four pieces of methi korma (chicken or mutton flavored with a spice mixture containing dried fenugreek (methi) leaves), two tabak maaz (twice-cooked lamb ribs, initially braised with ground spices and milk, then browned in butter), one safed kokur (chicken with white sauce), one zafran kokur(chicken with saffron sauce), and the first few courses. Yogurt and chutney are served separately in small earthen pots. Up to about 20 items are served thereafter by waza (the junior cook). Seven dishes are a must for these occasions - tabakh maaz, rista (meatballs in a red, paprika-saffron-fennel spice gravy colored with dyer’s alkanet), rogan josh, daniwal korma (lamb roasted with yoghurt, spices and onion puree, topped with coriander leaves), aab gosh (lamb chunks cooked with a fennel-based spice mixture, cardamom and partially evaporated milk), marchhwangan korma (chicken legs/thighs cooked in a spicy browned-onion sauce) and gushtaba (meatballs cooked in a spicy yoghurt gravy).The main course usually ends with gushtaba. The Gushtaba is a large meatball which signals the end of the main course. After that, desserts are served. In winters, the dessert can be a hot sweet dish and in summers, it is usually something cold.

    Excellent video for those who are curious about Kashmiri cuisine! The photography and commentary are both great. I appreciate the detailed information in the description section. I will definitely plan to visit this unique restaurant during my next trip to Bangalore which happens to be the city I was born and brought up in.     Haakh is NOT palak, it's a green leafy vegetable called as "Collard Green" or "Haak Saag". Palak and Saag are entirely two different green veggies. Thanks!

      The one which we had was the habba kadal saal, this has both wazwaan and kashmiri pandit delicacies in it. You can have only Trami also. 😊 and thanks for all the great words

This Habba Kadal Saal can be shared by5-6 people , yes Kabargah was the part of the meal. The price is around 6600/-. The quantity would be more than it is shown in the video. As they were kind enough to customise the meal for us, as we went as food vloggers. Sorry for late reply.

      @@Quixotic5666 Kabargah and tabak maz are to 2 similar dishes made with a little difference. Tabak Maaz is from Kashmiri Muslim cuisine where as KabarGah is from Kashmiri Pandit cuisine :)

      This meal is not in their menu as is. It was curated for bloggers for 2800. But there is a bigger meal for 7 people for 5k

      This was a customised plate. , usual plate is double the size , fit for 6 people for 6400/- but they also have smaller meal for 1 or 2 people.

    Really tempted to visit the place. Would you by chance know if the meat they serve is Halal. I tried reaching them directly to enquire but didn’t get a response.

    Had been to this place after watching this video. Unfortunately, the food dint match to our expectations, instead it was disappointing.
    The mutton rib was chewy and not as soft as shown in this video.
    We did otdered the wazwan thali, and this was heartbreaking, they charge a bomb-1375 for 1 piece of chicken, meat ball, rice rajma and salad.
    We can chose from much better options when the bill comes to 4-5k for two people.

    @4:52 datz lamb meat, ppl should no that restaurants will be serving goat meat n claiming it as lamb
    Lamb meat will nvr be pink , I'm commenting this particular comment coz I saw ur video in some restaurant where u told the meat is pink inside, this just want ppl to understand the difference btw goat n mutton, goat meat is cheaper than lamb, n most of the restaurants cheat, this restaurant looks like its serving really good quality food

      We didn’t mention the rates because this platter doesn’t exist in their menu. They created one just for us. Their is Habba kadal saal which has same dishes but with enhanced quantity for Rs. 6500/- good for 5-6 people. Sorry for the delayed response.

    First get knowledge, pandit are vegetation. Non veg dishes do not belong to pandit

      Believe me, there is a lot of knowledge required for making a video, but a little is also required to comment.
      Kashmiri pandits consume non-veg because of the lack of vegetation there. They don’t use ginger garlic though.

      @@travellingmunchies when it comes to kashmiri food, dishes may be non veg, i agree. However when it comes to pandit, they are scholars of sanatan belief. The pandit is like phd and the old Kashmir was ranging from today's j&k, himachal, uttarakhand, some region of panjab and haryana.
      Islamist came to kashmir and tried kashmiri recipe to experiment with meat to make these dishes but pandit are still pure so the objection is.
      So this is clear brainwashed mind which thinks heaven on earth was lacking veggies.

      Market as kashmiri pandit cuisine it is kashmiri food you know nothing we all kashmiri eat these from last 5000 years . Every state has its own dish when begal brahmin , kokan brahmin , tamil brahmin eat meat why not kashmiri brahmin . It is part of food and We kashmiri hinus are 98% non veg .

      it is not like last 5000 or 6000 years Hindus in kashmir ate non veg, but yes from last 1000 years or so almost 99 percent Hindus of kashmir eat non veg food,
      This could be result of cold climate, land of nagas, bhairav s, many local deities who were offered fish etc as well as Islamic influrnce•Islam came yo Kashmir in 9 AD but became prominent political forces by 12AD or 13AD
