However, the problem that you have come across isn't to be worried about. One of the main reasons of sticky Sheer Pira is the right thickness of double cream. If you have used single cream or double cream which is not thick enough as you would see that in the video then the easy fix for that is to add half a cup more milk powder as this will bring the Sheer Pira to the right consistency. Usually the softness is due to the double cream thickness. If the cream that you use is not thick enough then either boil the syrup for a bit longer or add half a cup more milk powder. This will hopefully give you the intended result.
Yes it is the same as whipping cream but I think the thickness may differ between brands, so the solution is to add a bit more milk powder to get it to the right thickness.
If your cream is not thicker then let it for a little bit longer on the stove to evaporate more water from it or use a bit more powdered milk just to thicken the mixture. This will help to make it less sticky.
