canning turkey... i use NO seasoning, straight up water, pressure cooked for 45 mins for average size turkey(8+kg)... i can't stress that enough.. NO SEASONING... chill in fridge for up to 24 hours after separating white/dark meat....put separated meat(white in bottom of pints/dark at top).. add 1 tsp kosher(pickling) salt at top of jar using 1" headspace @ 75 min for pints/90 mins for quarts... yummm.. lasts for years in the can! I have been canning turkey's like this for years and it is amazing!
The best video on doing this! Watched about 7 other videos and there was to much going on, you explained everything simply and straight forward. Everything looked great. Thank you so very much, I was so lost on what the steps and times would be for this.
Need to brown it in a big skillet first. just keep turning it. I put mine in breast up. make sure to use a trivet to keep it out of the water. make stuffing mix using just a little less water than it calls for. Tilt the cooker on its side while sliding the trivet to the side of the pot. then you can get your (gloved hand) under the trivet. Gently slide it off the trivet by sliding large knife under the bird onto your tray. I sprinkled herbs on top and it turned out perfect for the table, although it was difficult to keep it from falling apart.
Oh boy, did I overdo it!!! lol!!! I had a 14 pound turkey, and I cooked it for 3 hours. I was just guesing. Thanks a lot. I'd never heard of anyone else pressure cooking a turkey before. We cooked it like this for 7 years now. Tianca
Did you pressure cook the turkey prior to canning for the sake of de-boning it? I would have just cut it up raw and put into jars and canned it by raw pack method like I do chicken. 2LeeLou and KatzKradul YT channels are a great source of canning information. I enjoy your videos!
It may not look as attractive, but it tastes just fine, even for a thanksgiving dinner. I am a little uncertain as to what is considered a 'proper temperature' to cook it at in a pressure cooker. Are you at a higher altitude? I am at less than 1000, I believe.

A 14 pounder cooked in 40 minutes.One thing about cooking it in a pressure cooker if you undercook it you can always put it in the oven. I don't think there is any special temperature quideline for a PC turkey. I would assume it is the same internal temp as on oven roasted turkey. If any one has any info on this please let us know.

@@PrairieFoxSurvival I will purposely under cook it so the pressure canning will do the rest. I dont want the meat to be overcooked.
