• The carbohydrates that are not oxidised by the oxidising agents like Fehling's

Hi, the video is very informative, but I don't understand one thing about fructose. I don't understand why when we get the ketone group, from the opening of the hemiketal group, we suddenly switch to the glucose structure and a free aldehyde group. I don't understand how we switch to the aldehyde group through the ketone group and I don't understand the connection with glucose. Thank you very much
Fructose in basic medium undergoes enolyzation and forms ene diol which futher forms(is in equilibrium with) d-glucose + d-manose + d - fructose

Excellent explanation, however I think there is an error in the isomerizarion process that the open-chain structure of fructose undergoes. On the left side of the structure, the oxygen is as part of the chain, which it is not, since that oxygen should be as an O-H bond.
