You can also use frozen corn (thats heated through in some boiling water), roast in the oven or boil the ears. Allow to cool and then slice off the kernels and add to a large bowl. In a small bowl, whisk together the Greek yogurt, mayo, garlic, lime juice, zest, chili powder + salt. Taste and adjust if needed. Sometimes I add 1/2 tsp sugar to compliment the spicy. Pour this mixture over the shaved corn and mix to combine. *You can sub greek yogurt for sourcream
Just made this and it turned out so yummy. I roasted my corn (after cutting the kernels off the Cobb) in my air fryer @ 400 degrees in 10 min. intervals until golden brown. The dressing is amazing! My preference is the dressing on the side, yes I’m her. Always on the side.😂 I can take this everyday for a work lunch and feel satisfied. Thank you for this one!
