    hey Arnietex! thank you very much for showing these great cuts of meat. as a Canadian we never see anything like this in out grocery stores. I have found a local butcher and to my great surprise!!! they have skirt steaks and i cant wait to ask about the flap/ hanger! thank you for showing how to clean and cook these amazing steaks!!!!

    My knowledge of the "true fajita' is that back in the day it was meat scraps that would normally go to the dogs...it was dirt cheap and the poor would buy it and learned to make a feast fit for a king. Thanks for this lovely video, I really enjoyed it. God Bless!

    I stumbled across your channel last night and started watching. Subscribed this morning. Watching your videos showing your backyard, telling my wife that you have to be in south Texas. Then you mentioned the valley. Ive been to McAllen several times remodeling a home for a buddies madre. It kept intriguing me how close your backyards match so had to look you up. Your are town and her home are only a few miles apart. Everytime I have left there I've been sent home with stacks of homemade tortillas and or tamales. Cant make it down this winter from northwest Indiana. Thanks for the videos. If you have a good tortilla recipe i would love it. Keep up the great work. Thanks again

    I like to cook the trimmed area and collect the grease from the trimmings to brush on the main meat as it cooks.

    Arnie, the fajita meat they sell here in Shreveport as skirt steak is as tough as an old leather shoe. Hanger steak is quite expensive, if u can find it. For me it's a Sirloin steak they sell at Wally, marinated, grilled, an sliced thinly it's sumptuous.

    People say they like there meat medium rare.
    I like it medium rare with filet mignon as the meat has a little beefiness and I like some pink juice.
    For ribeye and NY strip Iike them medium coz dislike fat that is not cooked.
    For very mineral and beefy meat, I like them medium well because they keep that delicious beefiness without any pink juice and find them to strong when medium rare.
    So great if you like your meat rare or well done, colors and taste are personal and cannot be debated.

      You can use any meat you like but skirt steaks, flank steak and flap meat are the most commonly used. good luck

      Personal choice but if it's real thick they do cook quicker so it works fine if you do.

    The bottom sirloin flap is known here as "Ranchera." Arrachera is not as available here and it's more expensive.

      Hey @CoolJay, I discuss that in the previous two videos, I prefer outside skirts myself and inside skirts are pretty tough unless you have some really nice and young prime or Wagyu. They are all good though when done right. Thanks for watching and do subscribe so you wont miss the next ones.

      Flour tortillas son para fajitas n seafood taquitos, whereas the majority of tacos and taquitos are tortillas de maíz.

    There's no argument - fajita is specifically the skirt steak cut. Hence "fajita" or little belt - skirt. Any other cut claiming to be a fajita is not fajita, but in the same style. This is an immutable fact.
