My knowledge of the "true fajita' is that back in the day it was meat scraps that would normally go to the dogs...it was dirt cheap and the poor would buy it and learned to make a feast fit for a king. Thanks for this lovely video, I really enjoyed it. God Bless!

Then you mentioned the valley. Ive been to McAllen several times remodeling a home for a buddies madre. It kept intriguing me how close your backyards match so had to look you up. Your are town and her home are only a few miles apart. Everytime I have left there I've been sent home with stacks of homemade tortillas and or tamales. Cant make it down this winter from northwest Indiana. Thanks for the videos. If you have a good tortilla recipe i would love it. Keep up the great work. Thanks again

Arnie, the fajita meat they sell here in Shreveport as skirt steak is as tough as an old leather shoe. Hanger steak is quite expensive, if u can find it. For me it's a Sirloin steak they sell at Wally, marinated, grilled, an sliced thinly it's sumptuous.

People say they like there meat medium rare. I like it medium rare with filet mignon as the meat has a little beefiness and I like some pink juice. For ribeye and NY strip Iike them medium coz dislike fat that is not cooked. For very mineral and beefy meat, I like them medium well because they keep that delicious beefiness without any pink juice and find them to strong when medium rare. So great if you like your meat rare or well done, colors and taste are personal and cannot be debated.

There's no argument - fajita is specifically the skirt steak cut. Hence "fajita" or little belt - skirt. Any other cut claiming to be a fajita is not fajita, but in the same style. This is an immutable fact.
Those Texas flour tortillas he shows reminds me of my grandmother from Corpus.

You can use any meat you like but skirt steaks, flank steak and flap meat are the most commonly used. good luck

The bottom sirloin flap is known here as "Ranchera." Arrachera is not as available here and it's more expensive.
