It’s pretty nice to see a sushi place that isn’t greedy with the amount of fish they put on top of the rice. That looks like a generous serving of fish compared to most of the sushi I’ve seen.
As a diabetic, I find the fact that you can get a smaller amount of rice on the sushi or even none at all as just a normal part of the ordering process to be fantastic!

I’m happy to see there seem to be some options if your not a fan of raw fish! My fiancé gave me a 3-week trip to Japan for my 30th birthday and are planning on traveling sometime next year (when borders have opened up). He loves sushi and I think he would love this place, but unfortunately I’m not a big fan of seafood at all 😅 I can eat it if it’s fried though, so seeing your mother enjoy her food even if she’s not a fan of raw fish gives me hope that it will be a good food-experience for him and me both 🫣

There are a few similar to this in the US but sadly not common. Off the top of my head I know of two in Michigan in the metro Detroit area
Depends on where in the U.S. you live. Also could try Asian food buffets. I've seen em serve sushi sometimes. Not always.
