Hey Mark, Canadian here! The reason the colours and tastes are different has to do with when the sap was harvested; if it was early, mid season, or near the end. There are different “levels” or types; if you go to some of the family owned businesses or farms where they make it, they sometimes have testers that show how the taste changes due to the progression of the season. It’s pretty neat!

There is also an intermediate between syrup and raw sugar that usually consumed by pouring it in strips on snow. When it cools down, it becomes a chewy sticky strip one can collect on a stick.
Vermonter here! “Vermont Vintage Iron”. On average it takes 40 gal of sap to make one gal syrup. Vermont is strict on our brix levels to called syrup. Sounds like your product wasn’t evaporated enough. Later on the syrup gets darker due to variations in sap. Early season is gold or amber. Canadian is good but I am biased. Small Vermont producers are the best.
Tbh its probably not safe. Theres a reason why your not supposed to eat or drink anything until 30 minutes after you put mouthwash/ toothpaste in your mouth, and why you're only supposed to use a tiny amount per brushing. Theres alot of chemicals in our mouth products that are relatively harmless in a tiny dose once or twice a day, but can cause long term poisoning from overdosing.
FYI: darker maple syrup just means it’s made from sap from later in the season (and because the sap was boiled longer) which is why it’s stronger/more concentrated

I know this is a year old but Mark, the flavour differences mainly come from when in the season it was colleced. I think earlier in the season, it's a lighter taste, but later in the season, it's a rich mapley flavour
Most commercial maple syrup products are made with a propane boiler and reverse osmosis which takes some of the flavor out. To get the authentic experience you need to visit a farm to get woodfire boiled syrup

The stronger flavour and darker colour comes from a few factors. Boiling down the maple syrup for a longer period of time is a key one. Essentially you are boiling out the water to make it thicker and therefore elevate the flavour. Less boiling = less pungent flavour, but generally cheaper as you can get more volume per batch. Many people still enjoy the lighter flavour though! Colour and flavour are also drastically affected by the time of year you harvest based off of light exposure, weather, yearly temperature spikes, and environmental changes.
Québécois here. Canned maple syrup is vastly superior because the process of canning reduces the syrup's exposure to air, which helps greatly in conserving its flavor.

That's being a bit too vague lol. It's a store brand found in any store owned by the Loblaws corporation (who's president is ostensibly making the choice), but some of those stores have other name brands as well. Like No Frills which carries both PC and No Name brands.
A big difference in mapple syrup is the water evaporation step. What comes out of the tree is maple water, then you boil it to make it into syrup. The more you boil it, the darker, sugary and strong it gets.

@@andrea_k342 If you boil it enough then refrigerate like fudge you get maple candy. If you whip what you get from boiling, you get maple cream. They're thick, smooth, and viscous. And I love it more than normal maple syrup.
I mean, the differences are straight up how long it's boiled for and how well it's filtered; and then how it's stored and packaged (mostly the material of the container). I had some smoked maple syrup once. That was the most unique maple syrup experience I've ever had.

My father still runs an artisanal sugar shack with a wood oven in Quebec at 86... (for sale...) It's actually the ratio of sugar in the sap that varies the color of the syrup. With less sugar in the sap, it will need too cook longer to reach the right amount of sugar, which will make the color darker and taste stronger. So a good quality sap with a high ratio of sugar will make a lighter colored syrup. (If you buy syrup from a small artisanal sugar shack that cans everyday after finishing a batch, you will have cans with a slight difference in taste and color unless you ask for cans from a specific batch. We keep samples for each day and it's fun to taste the difference at the end of a season)
Important note: Maple syrup is not shelf-stable once opened. Unlike "corn syrup", "table syrups", and honey, _true_ maple syrup does not generally have a high enough sugar content / low enough water content to completely deactivate mold spores. Once you have _opened_ a bottle of maple syrup, you should store it in the fridge, or it can (and probably will) get moldy.

@@adenakee3901 lol haha most maple syrups in your stores are sweetened with corn syrup and has other added stuff. Pure maple syrup is much thinner, less sweet, and more of a natural flavor. I definitely prefer it more.

"President's Choice" is store brand, the equivalent to Great Value from Walmart.
That's being a bit too vague lol. It's a store brand found in any store owned by the Loblaws corporation (who's president is ostensibly making the choice), but some of those stores have other name brands as well. Like No Frills which carries both PC and No Name brands.
A big difference in mapple syrup is the water evaporation step. What comes out of the tree is maple water, then you boil it to make it into syrup. The more you boil it, the darker, sugary and strong it gets.
huh... I thought the different type of trees (I know there's like 3 types: black, red and sugar maple trees) you can get the edible sap from made a difference with the taste like how flowers can make a difference with how honey would taste

@@andrea_k342 If you boil it enough then refrigerate like fudge you get maple candy. If you whip what you get from boiling, you get maple cream. They're thick, smooth, and viscous. And I love it more than normal maple syrup.
I mean, the differences are straight up how long it's boiled for and how well it's filtered; and then how it's stored and packaged (mostly the material of the container).
I had some smoked maple syrup once. That was the most unique maple syrup experience I've ever had.

When I saw the maple syrup in the little dishes I was so relived, many non-Canadians do not understand that if you put the maple syrup directly onto the pancake it just makes the pancake soggy and looses flavour, HOWEVER, dipping into a small container solves this issue…

And the taste changes based on how long it is boiled, just like sugar.
Plus different trees have different colors and tastes from soil and the amount of the year that is warm enough for leaves. And weird fact the more tortured and harsher the environment the better the syrup.

My father still runs an artisanal sugar shack with a wood oven in Quebec at 86... (for sale...)
It's actually the ratio of sugar in the sap that varies the color of the syrup. With less sugar in the sap, it will need too cook longer to reach the right amount of sugar, which will make the color darker and taste stronger. So a good quality sap with a high ratio of sugar will make a lighter colored syrup.
(If you buy syrup from a small artisanal sugar shack that cans everyday after finishing a batch, you will have cans with a slight difference in taste and color unless you ask for cans from a specific batch. We keep samples for each day and it's fun to taste the difference at the end of a season)
Important note: Maple syrup is not shelf-stable once opened. Unlike "corn syrup", "table syrups", and honey, _true_ maple syrup does not generally have a high enough sugar content / low enough water content to completely deactivate mold spores. Once you have _opened_ a bottle of maple syrup, you should store it in the fridge, or it can (and probably will) get moldy.
