  • Think you need fancy equipment to cook great food? Think again! I’m sharing how to achieve gourmet results with basic tools and ingredients. Today we're making an inspired classic from an old restaurant I used to work in eons ago.
    I served this at the month long silent retreat, (link below) as one of the family meals. This is my version of Moussaka, inspired by the traditional, now made with whole foods, lentils, tempeh, tons of veg with a creamy velvety polenta as the topper. DELICIOUS! Seasoned to perfection! It's normally prepared with gobs of butter and dairy and meat filling. We're changing all that and making some healthier alternatives without sacrificing flavor or texture. This is a great vegan recipe for potlucks, family meal, restaurants entrees, catering buffets, cafes, or meal prep. It can be portioned and served individually and the cost is inexpensive. A must try. This can also be made with no oil for the WFPBNO buffs. I share tips on how during the show..

    INGREDIENTS:
    1 coffee cup size of lentils to 3 cups of water
    3 each Aubergine/Eggplant, 2 each diced - (save one for garnish later)
    1 200G Tempeh (or tofu or Plant based meat)
    1 Large white onion, diced
    1 Courgette/Zucchini, diced
    2 Tomatoes, diced
    1 large potato, diced
    4 -5 garlic cloves, minced
    3 tablespoons tomato paste
    ½ teaspoon Cinnamon
    3/4 teaspoon All Spice
    ½ teaspoon Nutmeg
    1 tablespoon Oregano
    Tablespoon Flake Salt
    Tablespoon Black Pepper
    1 teaspoon Garlic, Granulated
    3 - 4 tablespoons Olive Oil.
    POLENTA:
    5 cups water
    1 cup fine corn meal
    1 lemon, zest and juice
    2 - 3 tablespoons vegan butter
    1 teaspoon smoked paprika

    1 -2 handfuls shredded vegan cheese (optional)
    Other option to add, Unsweetened vegan yogurt, splash or two of plant based milk.

    I LOVE your videos, they are so inspiring and Beautiful and the food looks delicious.
    I have been WFPB for almost 20 years and the food choices have changed so much in that time.
    I am also a Coeliac so I am extra happy when a meal is GF or easy to make GF.
    I love that you are so compassionate and that your love for Frankie is so obvious. Frankie is Gorgeous and as a Guardian of 15 rescue dogs here at our home, I can see how happy and content she is.

    Would you perhaps consider doing some basic chef technique stuff, e.g. the "proper" way to slice an onion, or knife buying/sharpening, in Shorts format? I don't normally think the format suits most content, but you have an approach to things I feel like is unique in the so-called "content creator" space and might be able to make it worthwhile. At the same time, your videos tend to the longer side of thing, which I also love - I wouldn't want you to feel like you were cramming things in. Either way, thank you from a recent subscriber who has learned more from the incidental techniques in your videos than I have from formal recipes in quite some time.

    I made the ragout part in my slow cooker last night, after an initial sauté on the stove top to get the searing and flavour started. In the suburbs of Toronto we have a vegan cheese called the Green Goddess made in Guelph Ontario. She uses nut milks and ferments the cheese so they are real deal. I wish I could send you a selection. Most vegan cheeses have very little nutrition.

    Thanks for another great video! I appreciate that you show your mistakes-- would be easy enough to edit them out (or in, as it were, with the caramelized tomato paste), but leaving them in shows 1. The dish is often salvageable (if not its ideal form) and 2. Common mistakes to look out for in our own cooking.

    Question: you do or don't salt , rest, and rinse your eggplant/ aubergine before using it? Mine turn out bitter if I don't salt then rinse. I noticed you salting the pan for the sauteing of the eggplant/ aubergine garnish- that will take out the bitterness without the soak and rinse?
    What about the tempeh? One of my instructors said to steam it for 5-10 minutes to get out the bitterness before using it. I still could taste the bitterness in it....If I braise it in soy sauce and garlic for a Reuben sandwich for at least an hour in a crockpot the bitterness goes away, but if you have a faster trick, I'd love to know it.

    If I was your neighbor, I'd give you access whenever you want to any or all the veg and herbs I grow. I love mousaka and have tried to make a vegan version before. It was edible but....!!     Derek! I am excited about this...20 years ago when i used to eat meat i would go to a Greek restaurant here in OKC. They made a greek beef tomato and eggplant stew and i believe that's what you made (although it may just be an all purpose greek base that's used in many dishes). If you made it for us as neighbors we would be so grateful and feel papmered lol. I love how versatile your recipes are...
    I have been looking for this base recipe for a while and we will be trying it out for sure!

    I love love how you are with Frankie!! I love my cat, Mr. Pip, the same way. It shows that we are free!! Many people are not. I am vegan and know truth and freedom in that. I am vegan for the animals and no, I would NEVER go back!! I love your cooking! Thank you so much. 💙
