    As a past member of the Albert Douglas livestock association we used to barbecue a thousand pounds of beef every year for the fair in a huge pit. On a side note no T-Rexes were in the show, and you didn't think I was paying attention.

    Outside the vegetarians, I can't think of anyone who hasn't at least tried, tasted, or ended up eating BBQ throughout their lives. Wet, dry or in between, it's great stuff!

    From the 1800’s and less now but currently, a pit was dug. Mesquite was burn in the pit. A goat was butchered and cooked in the “pib” cover by dirt. the goat was served with frijoles, salsa and tortillas de harinas. (northern Sonora, southern AZ)

    Can related, as Argentinian the way we cook and technics of grilling our barbeque are so unique, from grills, stakes crucifix (from goats, pigs and calves) and our special sauce the chimichurri (made out of parsley, oregano, garlic, vinegar, oil, ground chili and salt)

    Slow cooking over a smoky fire has been with us since the beginning.
    About two weeks after cooking meat over a fire was first 'invented', Ogg's son Dorc brought home a load of green wood for their fire.
    The rest is history.

    Thanks again Santee & Co. At 2:37 into the video the newspaper read State of South Carolina Edgefield District . That's in my home state down along the coast . We Sandlappers are proud of our mustard based BBQ . It's been claimed it was on the coast of S.C. and Georgia where the Spanish and Native Americans combined NA smoking with hogs to create the first BBQ in America . The Spanish never found the Fountain of Youth in Florida , but I reckon BBQ is a nice consolation prize . A couple summers ago I sent you some S.C. mustard sauce . It's probably been used up by now , along with the Cheerwine and Blenheim Ginger Ale . I still have the Arizona Ghost Riders t-shirt . Thanks Pardner !

    Oh boy. The singing conquistador 😳 I didn’t know barbecue was that big in Arizona! I was also surprised about the barbecue scene in California from various shows on Cooking and Travel channel. I mean, we all know Texas does it best, I saw the Stubb’s sauce on the shelf. I’ve never been to Elgin, but it’s roughly north of Lockhart, which I HAVE been to. The barbecue is glorious down in the Hill Country. Great video, Santee! One of my favorite subjects too!

      Texas is the best, hands down. Our BBQ restaurant choices in AZ lean on the lame side, but there are a few standouts.

    LOL Just did a pork loin the other night, then the wife did her roasted corn on the cob still in the shuck and some steamed cabbage, been a happy house for the last couple of days. And Dirty Dan strikes again, love it! On the up side neither Santee or the ghost got any new holes in them, hahahaha! Going to go get some more of that pork, cabbage & corn, it'll be good for breakfast too, hmm maybe I'll fry an egg to go with it.

    Recall the scene in the movie "Giant" where Elizabeth Taylor playing a genteel woman from Maryland goes to her first Texas barbecue. She (and the audience) sees Rocky Mountain oysters cooking. Then a calve's head where the brains are scooped out. She faints. And I almost did when I saw that. Ga-ross! Here in Toronto, Canada barbecue places are few and far between.

    Hey Santee, just got back from a huge roadtrip from the Little Bighorn to Devil's Tower to Theodore Roosevelt National Park to Deadwood/Mount Rushmore/Crazy Horse/Badlands National Park, the west is alive and strong all over those places.

    Santee, you gotta be cautious of snake oil salesman free samples. Especially when given by "Doc" Dirty Dan.
    The BBQ place I love in Tulsa is called The Knotty Pig. Their BBQ dinners are scrumptious. They've got some real interesting names for their burgers which include smoked bacon ,sausage or pulled pork, like the The Van Helsing, The Widow Maker and the Eastwood to name a few.
    I surely hope every thing came out alright in the end for you, Santee :)

    If you ever find your way into the Carolinas, you have to try their chopped pork BBQ. Lexington style has a tomato-vinegar sauce, and Eastern has a vinegar based sauce without the ketchup in it. They have pig pickins’ out there as they are called… Dang, now I’m hungry!

      Being from SC, I'll say that both of those are excellent. A lot of people are put off by our mustard based BBQ sauce but it's also good, along with those OP mentioned. (I think we are one of the only states or even the only state with three different types of state BBQ sauces). Really any BBQ you eat here is gonna be delicious.

    Santee, I must needs to correct an item in your video-which I did enjoy none-the-less. Eugene Field was from Missouri. He did work in Denver for a couple of years, but returned to Missouri. Yeah, I know we’re famous for the James boys, the Youngers, Belle Starr, etc but we have to claim a good guy whenever we can!

    Best bar b q places make their own sauce not place store bought sauce on the table.
    I think out favorite is probably Riverport Bar BQ in Jefferson, TX. (Nice historic town too). I love their ribs and fries that go great with their sauce. My wife loves their brisket and fried okra.
    We love doing our own bar b q every 4th of July. Getting into the kitchen and just trying things is fun...and, of course, charcoal outside.

    Eastern North Carolina style using vinegar, salt, sugar, and red pepper was used not only to flavor the meat, but also to preserve it.

    Santee, love your channel! I recently came across it, & binged watched all the episodes. The way you present history makes it enjoyable. Keep up the good work. We live about 3 miles from Southside Market. Not only is their brisket & ribs good, the turkey breast is pretty darn good too! Gonna go smoke some turkey legs for lunch.

    Back in the day, at Randolph Park, there used to be a pit bbq there. I think it was the Kiwanis used to put it on. Really good. I just watched El Dorado, great movie.

    Got to love BBQ, my Uncle Jason, entered a few times in the Famous Dave Competitions. His group for BBQ is Smoking Caboose. He makes a pretty good recipe for ribs. I've even delved into BBQ with my brother. He made a recipe for smoked cheese its. Good recipe by the way. I've made Memphis Dry Rub, with a whole spread of food.

      In my home state of Iowa we have four good restaurants for BBQ. Smokey D's is probably the best in Des Moines. While Hickory Park is ok, but pretty popular. Whatcha Smokin' and Cornbread are a bit nuance.

    As always, a wonderful, and thorough, look into the creation of a cultural staple; one that's become so ingrained at this point that it's a, "Well, it's ALWAYS been like this," hegemonic truth. The only point I'd object to is at 3:15, with the comment about, "CIVILIZING of the West"; the First Nations had already done a pretty thorough job as far as that was concerned. Might go better with, "Input of Western culture," or the like. Also, much appreciated having the cultural origins of the term, "barbeque" detailed. All thanks.

    I used to love smoking cuts of pork, like pork shoulder, low and slow for hours in my large Weber "kettledrum" grill, which made a great smoker. The smell was tantalizing! After watching this video, I felt sorta sad that I had to get rid of the grill.

    Nice! The AMAZING diversity in BBQ just makes it so American it is crazy... It truly does bring everyone together! Also, the number of dishes to try just never seems to end until Dirty Dan kills your appetite for a week!     Santee, I believe this is the first video I've seen anywhere that sampled a sound bite from "You're a Good Man, Charlie Brown". (Later today I'm gonna start up some coals a cook a Pork Butt Roast in one of my cast iron dutch ovens.)

    Hi Santee I do love a good barbecue.. ever tried banana or glacic on the plate its incredible mouth watering even.
    We do love our barbecues in new Zealand can't beat it must say one of my brother is quite the master of it now I like my meat really really rare so I tend to not have the full effect of the smokey goodness.
    Thanks for a mouth watering tasty experience and history lesson.

    Cayenne pepper, mustard: the hot kind, ipecac, actifeda, was it oil of cloves, or was it, no it was croton oil. And let's not forget the gunpowder.

    Slow cooked pork steaks with some Sweet Baby Rays hickory sauce, loaded potato salad and some baked beans with a large glass of sweet tea and leave me alone.
