Low Net Carb Bamboo Fiber Lamingtons (Chocolate Coconut Sponge Cake) Recipe - Keto And Gluten Free

  • This traditional Australian bake is coated in a chocolate icing and rolled in coconut. Even if you’ve never heard of these before, you just know it’s going to be good. They are made from bamboo fiber with sweetener. So you can eat them even if you're on a low-carb, keto or gluten-free diet.

    6 large eggs
    1 tsp vanilla extract
    35g bamboo baking flour (28g bamboo fiber and 7g ground whole psyllium husk),
    45g sweetener (stevia erythritol)
    a pinch salt
    1 tsp baking powder
    10g melted (room temperature) butter (optional)
    2 stick (222g) unsalted butter
    90g sweetener (stevia erythritol)
    50g cocoa powder
    150g unsweetened coconut milk
    3 tsp rum extract
    grated dried unsweetened coconut
    Steps
    Separate 6 large eggs.
    Mix the egg yolks with 1 tsp of vanilla extract.
    In a mixing bowl, measure all your dry ingredients:
    35g of bamboo baking flour (28g of bamboo fiber and 7g of ground whole psyllium husk),
    45g of sweetener (stevia erythritol),
    a pinch of salt,
    1 tsp of baking powder.
    Mix them well.
    Beat the egg whites until it’s super thick and fluffy and holds stiff peaks.
    During this time, prepare the cake pan. Line the bottom of a 12” x 8.5” (30.5cm x 21.5cm) pan with parchment paper and
    preheat your oven to 350F (175C).
    If you use allulose sweetener preheat your oven to 325F (160C).
    Add the egg yolk mixture and beat at medium-low speed until it’s combined.
    Sift in the dry ingredients and beat at low speed, just until the flour is mixed in.
    You can add 10g of melted (room temperature) butter to the batter. (optional).
    Use a rubber spatula to fold the mixture a couple of times.
    Pour the batter into the pan and spread it.
    Bake the batter in preheated oven at 350F for 25 minutes.
    (If you use allulose sweetener, bake the cake at 325F for 25 minutes and covering the top of the cake loosely with parchment paper will prevent the top from burning.)
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    Cool the cake completely on a wire rack.
    Make the chocolate sauce.
    Measure the ingredients into a saucepan:
    2 stick (222g) of unsalted butter,
    90g of sweetener (stevia erythritol),
    50g of cocoa powder,
    150g of unsweetened coconut milk.
    Heat until the butter melts and stir.
    Add 3 tsp of rum extract and mix them.
    Cut the cake into squares of the desired size.
    Pour the grated dried unsweetened coconut onto a plate.
    Quickly coat each piece of sponge cake on five sides in the chocolate mixture (using a fork) and then gently roll the cake in the coconut (unsweetened).
    Repeat with the remaining sponge pieces.
    If the icing mixture becomes too thick, warm the sauce up and whisk in some coconut milk to thin it out.
    Place the cakes in the fridge for at least 30 minutes before serving.
    Light and fluffy vanilla sponge with a thicker chocolate, coconut coating. It is so delicious!
