Meals On A Budget: Vegan Dinner Edition

As this meals on a budget challenge comes to an end we can really see the challenge in providing your family with inexpensive meals in todays economy. It is not easy. Today I decided to go with a vegan alfredo meal option using brown lentils as our protein and I thought I would be well under budget but looking at the ingredients I was surprised to see this edition was tricky with using cashews and nutritional yeast flakes. We did well to keep it simple and as cost effective as we could. I still think using lentils for a proteins source really cuts that proteins bill into fractions. Normally I would add a nice fresh salad or garlic bread with this meal but it was just out of the budget of the $5.00 allotment for this challenge. I want to thank Angie from @MiAnUAcres for asking me to be apart of this collab, it really helped me to see where exactly some of the higher costs of making meals came from and helped me see where we could cut the costs in todays economy.
