I love that you do real Tex-Mex cooking. My best friend was Texican, I am TexCzech. I can cook Tex-Mex and she can make Kolaches.....our moms taught us both to cook. When our Grandmother's were giving the instructions, my friend would translate from Spanish to English and when my Grandmother was doing the teaching I would translate for her from Czech into English. My friend is still my best friend and we are in our 60's now. She swears she makes better Česnečka than I do. But my enchiladas are better than her's. LOL P.S. The lady across the street was Cajun. She taught us to make Gumbo, Hot water corn bread etc. The thing is, she did not have a daughter our age and she spoke very little English. We could not understand a damn thing she said but boy could she COOK. We both love cajun food to this day and can make a mean Gumbo. I love Texas....Texas is like taking a world tour on every block of the neighborhood.
I'm Korean, and my husband was born and raised a Texan. We're having a sudden craving for enchiladas. I'm going to make the traditional sauce using dried ancho because that's what my local store had available. I sometimes make a Korean/Tex-Mex fusion. It's comfort food for people who like it on the spicy side.
Born in Texas my grandmother made the gravy style type. But we lived on the west coast for many years and also enjoy “Colorado” style sauce as well. Going to try making some today. Thank you for sharing your video.
I make mine similar! I usually boil my onion and garlic with chicken stock then add the Chiles after I turn off the water. It just makes the blend easier for me. Add Badia Chile lime seasoning,salt and a small squeeze of ketchup to finish. I love watching you videos. Your food looks amazing!

I have made this twice. It’s crazy delicious and I’m not crazy about red enchilada. The kids finish off the platter before the adults can get a bite. It’s that good. I did have ONE BITE. Perfect to make & freeze for later meals. I use 1/2 to full chicken depending if you are making one for later. Of course Costco rotisserie chicken at $4.99 rocks plus a nice sliver of velvetta in each corn tortilla. I use Asian knorr chicken bouillon because it’s a perfect balance and not as salty as knorr Mexican style pollo de caldo.
I am making the second gravy and use my oven to make some enchiladas and warm up our tummy’s and the house it’s brutally cold in New York. Thanks this was great like everything that you do.

Awesome recipe! First one I’ve seen that didn’t include tomato sauce/paste which tweaked my interest. Substituted the water for low sodium chicken broth. They taste even better on the second day. This will be my go to recipe. Thank you soooo much!

She and my Grandmother exchanged recipes all the time! We were Italian and they were Mexican. I grew up in the best of both worlds! We still make her pork tamales every year for Christmas. Wish my Grandmother could have written down Mrs Benevidez recipes, but neither of them could read or write in English! Bless you for writing a cook book! Next time I’ll put 1 spoon of bouillon because I made a smaller portion because it was a tad salty but with the sour cream it made it perfect. Thank you I will be looking for more recipes. I made the gravy style sauce. It came out great. My chile powder was nothing special, just a store brand, but it worked! I had some ancho powder but didnt use it because it tasted bitter alone. So maybe I'll experiment with that one another time...TYFS!

my favorite restaurant for enchiladas is in San Antonio and it's called el bosque. they're cheese enchiladas uses both the red sauce and the gravy. it features a large circle of the gravy and then the enchiladas laid down in that and the red sauce over the enchiladas in a smaller circle. I hope that makes sense. the combination of the two is phenomenal. make a trip there just for that restaurant, please you owe it to yourself. your recipes look excellent.
Actually, the chili “gravy” style is very similar to the very popular Sonoran (frontera) enchilada sauce. It’s lip-smacking scrumptious. I made it with my homemade leftover chili purée.

I freeze my enchilada sauces in quart freezer bags. Store them laying flat. Saves room in freezer. Works great.
