Rick and Morty "for kids", crazy wacky adventures, delves deeper into plot in later seasons, but still occasional adventure episodes.
Yeah! They didn't treat their audience like little kids, as we all grew up, so did it but still kept it so younger audiences could like the show as well. I think that's a balance that alot of people can't seem to figure out anymore. Hell not even the producers for SpongeBob can figure it out anymore, its all just brain rot for little kids. Not saying it has to have dark themes (then again there was afew darker themes if I remember correctly, though the only example I can really think of would be from the 1st movie), but at least people of all ages could enjoy it.

Finn starts out 12, assumes the audience is also 12 and as the seasons go just as the audience that started the adventure with him grow, so does Finn, and goes through that journey of discovery and how fantasy relates to the age group from random silly weirdness and adventure for the sake of adventure to deeper lore and darker themes with higher stakes.

The entire first season is kind of "nonsense" adventures, but it sets up a few things which will be important later on, you just won't realize it until then. Towards the end of the second season is when things start to happen for reals. If Nux keeps going I'd be happy to follow his journey.
If it helps, you can look at Adventure time like its a DnD groups first time playing DnD and as time goes on the players develop their characters and the DM learns to not be as lol random and get a pretty good lore story rolling. Stick with it!

I remember thinking after the lich first appeared how I wish he would show up again and when he did it was so amazing. I was also glad when he ended up being the guy they fight in the final episode(technicaly wizard city was the last episode but together again was intended to be the last one due to obvious reasons)

Looking back at it as an adult, I can honestly say that the show touches on some subjects, and brings up topics that I rarely get discussed or touched upon in media let alone this genre of media. You know, as much as I love this show, it's the only show I've watched that actually makes me exhausted after watching a lot of episodes in a row. Like I mentally can't handle watching it all day

since this is a show that grew with it's audience, i can understand looking at the start and thinking it's weird and dumb. i remember thinking the same thing when i watched the premiere, and probably the entire 1st season. i *really* didn't like it and felt embarrassed simply watching it, but as time went on, it got *_REALLY_* good

nux NEEDS to binge it, its long and gets crazy good... idk if he will drop it too early or at least for vids.... idk it multiplies after session 4 ig but through the first few seasons its still got good stuff
