Quick & Easy School Lunches for My Vegan Kid

    Granola Bars (makes 32!)
    *adapted from oh she glows feel good hearty granola bars
    - 3 cups rolled oats
    - 1 cup sliced almonds
    - 1 banana
    - 1 cup nut butter (I do a pb-cashew mix)
    - 1/2 cup maple syrup
    - 2 tsp cinnamon
    - 2 tsp vanilla extract
    - 1/2 tsp salt
    - 1 cup walnuts, chopped
    - 1 cup sunflower seeds
    - 2/3 cup pepitas
    - 1/2 cup hemp seeds
    - 1/2 cup flour
    1. Set oven to 325F. Spread out oats and almonds on a large baking sheet. Bake 15-20 minutes, turning once.
    2. Once the oats are done, set the oven to 350F and line a 9x13 dish with parchment paper.
    3. Mash up the banana in a large bowl. Add the but butter, syrup, cinnamon, vanilla, and salt and mix well (microwave the nut butter first if it's very stiff).
    4. Add the toasted oats and almonds, along with the remaining nuts and seeds (walnut, pepita, sunflower, hemp) and flour. Mix well.
    5. Press the granola into the pan. This should take several minutes to get it as flat and even as you can.
    6. Bake at 350F for 25-30 minutes. Let cool completely in the pan, then cut into squares. Store in the fridge.

    We love baked cauliflower with bagel seasoning or cheese powder (theater popcorn seasoning). We're not a vegan family, but veggies are definitely not skipped in our house.

    My 6 year old is very particular about having a fruit container separate so thats what we do. Lunch box has the main lunch, usually a *dairy*, a snack or two, and maybe some fruit or veg, then the fruit container has another fruit or two. Or a fruit salad

    In Europe the Alpro Growing Up drink 1-3+ (soy milk) is fortified with iodine. It is one of my favourite soy milks here.

    I was using a tofu press for like 8 years then it broke and I just pressed the tofu right before I cook it, basically just giving it CPR with another dish and I think it comes out tasting better and the texture is fluffier. You do have to fry it at a higher temperature because the water cools down the oil pretty quick but that makes it even crispier. My tofu press broke like months ago and decided not to bother replacing it.

    I've been using a Nova Scotia Oatcake Recipe for Chewie bars modifying it slightly to make actually chewie bars & kiddo loves them. I do vanilla and sunbutter. They're not the most healthy but sometimes we just need carb pick me up.

      @@bumper21 I use canola oil instead of butter and bake them 3-4 minutes less so they're still done but not crunchy.

    If you let tofu freeze and then thaw it dries out so much better than with a press. It’s insane. I saw it in another TH-cam channel. You can do it right in the container it comes in. Just takes a couple of days of thoughtlessly moving it from to the freezer and then back to the fridge.

    For European viewers: The yumbox looks almost the same and has the same functions. It comes in different sizes and designs. Not dishwasher-safe though.

    I’ve seen a lot of videos of lunch for kids from American parents. Almost everyone gives their kid a treat in the lunchbox. Usually chips or candy. It looks so weird to me. Are your kids also eating these treats at home everyday? Usually these things are reserved for the weekends where I’m from.
    Don’t get me wrong, it’s completely fine but in Denmark a lot of schools have rules on no sweets etc.

      Yes, in America, many (if not most) children get treats everyday, multiple times a day. I am a registered dietitian, and I have lost count of the amount of parents that feed their children sweets for breakfast, sweets for snacks and treats after lunch and dinner and don’t get why they struggle with weight and dental issues. Sad state of affairs!

      It's very common. As a teacher, I used to see many kids come to school with multiple sweets and treats in their lunch. I usually don't pack a dessert or packaged snack in my kids lunches...maybe about once a month as a nice surprise.

    Lunch has been hard for us, and my son tends to eat almost the same thing daily. He has sensory issues and will not even try sandwiches or wraps. On top of that, they get a very short amount of time to eat! Thankfully he can have nuts in his lunch though, that really does help!

I learned quinoa and peanut butter are not that interesting sources of protein and now I need to buy vital wheat gluten and try to make some seitan lol

    I don't think that other child is eating two sandwiches; they probably have a brisk trading racket going in the lunchroom.     Somewhat random video request, but would you consider talking about David Sinclair (scientist) and his approach to diet/health - he is mostly vegan, takes very specific supplements, and follows small eating windows for the supposed anti-aging or longevity benefits.

    Hello. Could you make a video about how to eat more protein without using powders? They are not affordable where I live and I'm struggling to eat more than 60 grams of protein on days where I try to include eggs, beans, nuts, seeds, meat and cheese. (Sorry, I am not vegan, it is not affordable where I live either), but what do you suggest eating to get enough protein? The problem I have is that the foods high in protein are also high in fat which would force me to eat way too many calories.

      Seitan is probably your best bet. You can make it yourself using regular wheat flour using the flour washing method (many tutorials on youtube). Macro-wise it's mostly protein with a small amount of carbs and almost no fat.

    I have one question, i work in a preshcool that is infants-kinder. KIDS ALWAYS share their lunch and even when they don't share other kids will try to eat the food of others. And i can tell you as a teacher it is hard to stop kids from eating another kids lunch. So how do you feel about the idea that your kid might be eating non vegan food,from possibly eating other kids foods?
    (Personaly as a vegetarian) If i had a kid i wouldnt get too upset at what they eat at school but i would definitely enforce and promote a plant based dite (with the occasional egg and dairy).

      She's talked about that in another video of hers: She isn't *forcing* her kids to be vegan, but her kids have grown up with the understanding that for non-vegan foods animals have to suffer or die, which is why they with their not-yet-suppressed-by-the-world empathy choose to eat vegan food. Now it's possible that in school they don't ask other students first what their food contains, but there's trust in the kids to just be responsible for their own integrity.

      @@Kitty4u I don't think there would be much of a reaction, but I'm not her so I can't say for certain. From what she's said before she just tries to instill a good moral compass in her kids and if they decide to go outside of that that's their decision. She's already said she will not be buying any non-vegan food for them, which I think is good, but she's probably not gonna be a helicopter mom about it either.
      In short: I'll think she'll be disappointed, but won't scold, tho she may explain again why she doesn't agree with that decision.
      As far as I can tell she treats her kids with respect and not as decoration that are her property, and respecting someone making some poor decisions occasionally is just part of that.

    instead of putting a fork in the boxes, how about a toothpick? A single tooth pick should fit and would be good for picking out a few pieces of fruit.

      It would work, but it would be better to use a mini bamboo fork to reduce risk of choking. A 7-year old is smart enough to know how to use utensils, but I remember still doing a lot of stupid things in the first grade 😂

    Little surprised you pack pb&j. I work in childcare, infants-kinder, peanuts are not allowed!! Only sunbutter. (I think almonds are okay at this center but previous centers I worked at no nuts at all!)

      peanuts are generally not allowed because of them being a choking hazard, but nut butters don't have the whole nuts, they are blended, and if it's because of alergy concerns, new studies show alergens should be introduced before the age of one, in Holland for example they advised my sister in law to introduce peanut butter in like the first days when the child is given solids😅 but I've seen recomandations vary between countries even here in Europe, sometimes can be confusing

      Which state or territory are you in? I just looked up Queensland policy and schools can't ban any food from being brought to school. They can however make an unenforceable request to parents not to pack whatever foods.

    Idk man, I can't stand other peanut butters other than the simple, natural ones, idk if it's my country that has shitty ones but the sugary ones I tried went in the trash... the creamyness of the natural peanut butter is just 🔝 for my taste buds and with sugar from jams or honey are just from another world 😵‍💫 love how your kiddo's lunches look. wish i could make thise healthier choices for myself like that, cuz it seems in my head "healthy" is only reserved for my kids and i can deal with what scraps i get lol 😅

    I'm sorry, but these might not be healthy for a kid that's growing up. I think they should get the appropriate nutrients that they need from natural meats. But eitherway as someone who has GERD problems I will try these delicious meal ideas hehe~

      B12 supplements for vegans are perfectly normal. She doesn't need to share her children at all but she did say they get regular doctor check-ups and are just regular healthy kids. I remember her recently posting about their dental appointments and again - no major issues.
