- Rezala is confined itself within the periphery of Kolkata. A medium thin white gravy chicken recipe that is best served with roomali roti or biriyani.This dish is just magical with its aroma, texture and taste.

Ingredients:
Chicken 500 g
Cloves 4 n
Cinnamon sticks 2 n
Cardamom 4 n
Bay leaves 3 n
Butter 2 tb
Curd 1 cup
Cashew nut and poppy seed paste 1 tb
Oil 1 tb
White pepper powder 1 tb
Ginger garlic paste 1 tb
Onion paste 4 n
Salt
Green chilly 3 n
Garam masala 1 tb
Red chilly 4 n
Saffron ½ g
Khewra few drops
Directions:
First marinate the chicken with salt, white pepper powder, ginger garlic paste, curd, onion paste and rest for 2 to 3 hours.
Heat butter in a pan add whole garam masala (cloves, cinnamon sticks, cardamom, bay leaves), onion paste, ginger garlic paste cook till raw flavor is gone and add white pepper powder, salt, chopped green chilly, cashew nut and poppy seed paste, curd and add marinated chicken, water once it comes to boil put the lid on and let it cook for 30 minutes in a slow flame after that add garam masala, sugar mix it cook for till chicken is tender,
Heat oil in another pan add red chilly, onion rings, sprinkle some salt, cook till onions are brown and pour this on the top of the chicken cook it for 2 to 3 minutes and add saffron switch off the flame.

meat rezala is not only confined to calcutta. it is also from other areas of West Bengal and Bangladesh. to some Bangladeshis and other people in India and Pakistan, it is simply sada qorma.

Hi. nice recipe! but need to say one thing!! in Rezala for flavouring Nutmeg, mace is must (which I think is present in your Garam masala powder). and most importantly, Kewra Water, Little Rose water and 2 drops of Meetha Attar.. Thanks :)
