- The secret to this recipe is use enough peanut butter,the amount of ingredients i used for this recipe could feed 8-10 people. you can use less tripe and less ingredients to make just for one or two people. I usually cook family style meals, also you can also add different vegetables in the end. some people use peas and carrots and add a boiled egg on top. I am from quayaquil and this is how my mom and grandmother use to make it. everyone that has tried my tripe has become a fan. i am sharing my family recipes for you to enjoy.. I can read/ write & speak spanish but English is what I know best. I LOVE ur channel b/c I love my ecua food but sometimes it is harder for me to follow recipes in Spanish so I just want to say on behalf of all non-ignorant ppl (like the moron who commented above), we THANK YOU for taking the time to make these wonderful tutorials!
This has been a childhood dish of mine & my grandma was the ONLY one who was able to make this dish. When she passed away I sadly never got the recipe so THANK YOU SO SO MUCH!

Even though La Guatita is an Ecuadorean tipical dish, and this video was explained in English I LIKED IT. I really enjoyed watching how she explained step by step, and also I liked how calmed she was while she explained the process of cooking Guatita. The only downfall of the video was translate everything to my Dominican wife, LOL she wants to learn how to cook Ecuadorean style, other than that this video is AWESOME. I haven't ever been able to cook tripe in 1hr. I used to sell this exact dish, we called it Wata. I would let 6 slow cookers simmer overnight 5 hrs with ingredients, then in the morning I would finish with PB & cilantro. Would always sell out for lunch. Its always so good 👍

I really enjoyed watching this video, it was very instructional and your tone of voice was very friendly.... LOL I noticed that at some point when you were chopping the vegetables you had your nails polished, but when you were cutting the tripe your nails were cut and without nail polish.

yes that is true, some people don't know what they are missing. i must admit that i have changed some people minds soon as they taste this dish. they become immediate fans of tripe.. i myself don't like cow tongue but i been told its yummy.. thanks for watching!
I am ecuadorian too and at times we call it refrito, it's not pr or dr style but all nationalities have their type of "sofrito" in Ecuador we do make a refrito with many dishes. With is basically onions tomatoes peppers and some cilantro. Even when I went to Ecuador people make their own too

i do have a recipe for a cangrejada but the sad thing here in new york we don't have those big delicious crabs that we have in ecuador. what i can do is upload a video of ecua style cangrejada but with crabs purchased here locally. please keep watching i will have that video for you soon.

Great instructions! Good job! I've tasted this dish before. It was served more like a soup. Somehow when my sister-in-law made this, it came out mostly white, with white tripe, white potatoes and white broth, it looked like clam chowder.
I'd love to know how to make Fanesca (Ecuadorean Easter Soup), but I heard it's really hard and time consuming to do. Do you know how to make it? You're cooking presentation style would be perfect for such a difficult recipe.

This is very similar to a Filipino dish called Kare Kare, which is also primarily comprised of beef tripe and peanut butter; only the vegetables are different. Being Asian we serve it with rice too.

yo prefiero usar la blanca para el refrito y para herbier. pero si no tienes blanca yo pienso que esta bien. en occasion no e tenido blanca y tuve que usar roja.. gracias por ver mis videos y dejame saber como te sale..

yes i rub it with lime and wash it, i also let it soak in some milk for lik 20 minutes then i wash it again
is the peanut butter any kind that you would find at your grocery store?
Whatever peanut butter you think tastes good. not crunchy, smooth or regular.
