  • Garam Masala Recipe | All-Purpose Homemade Garam Masala names in Hindi & English | Chef Kunal Kapur
    All-purpose garam masala - easy to make garam masala at home for all of your dishes. One masala can be used for Mutton, Chicken, Masala Chai, Vegetables, curries, and for all other dishes. Make your favorite Garam Masala at home, store it in an airtight container and you could use it for months.

    Points to keep in mind while preparing Garam Masala at home
    • In olden days in Indian medicine was food and food as medicine. For centuries healing happened with the use of various mixtures of spices and herbs that were added to food. And hence garam masala was born.
    • Each masala(spice) has a character in flavour, taste & aroma, so add spices to balance each other.
    • There can be no one single garam masala recipe that works for every recipe. You have different spices and herbs for different dishes.
    • Make sure to use dried herbs and spices for garam masala.
    • You can sundry the spices & herbs for few hours to a day or can lightly toast them on a pan or tawa.
    • Remember we have to Toast the spices do not Roast the spices. Roasting the spices will alter the taste and colour of the final powdered garam masala.
    • dry toast the spices together depending on their size. So all large similar size spices gets toasted together and smaller together.
    • Delicate herbs are to be gently heated to remove any moisture from them, overheating will kill their flavour.
    • Each spice has a distinct taste but broadly they can be classified as Sweet, Spicy, Bitter and Neutral. A good garam masala balances out these 4 things to bring our a bouquet of flavours intended to add a punch to the dish/meal.
    • if grinding spices using an electric grinder make sure to grind it in short bursts rather than running it continuously as running it for long will heat up the spices thereby giving loss of flavour.

    For 1 cup garam masala:
    Bay leaves 3
    Cinnamon 10 nos
    Big elaichi 4
    Nutmeg 1
    Pepper corns 3tbs
    Cardamon 1/4 cup
    Cumin 1/4 cup
    Javithi 2
    Cloves 2tbp
    Fennel seeds 3tbp
    Dhania seeds 2 tbp
    Shahi jeera 2tbp
    Stone flower 2 large
    Rose petals 1/4 cup
    Kasuri methi 4 tbp
    Total 15 ingredients
    This is for my reference 😁😁😁. This way can't lose the written recipe 🤷‍♀️

    Good recipe Kunal... I follow my mother's recipe and she never added dhania and saunf.. That was mixed and grinded seperately and stored.. Rose petals is a new ingredient for me.. Will surely try..

      Rose petals are particularly used in biryani masala. Most of the masalas are variant of garm masala by addition of certain spices for desired effect.
      Bengali garm masala is simplest 3 ingredients one, just clove, cinnamon and green cardamom, yet most expensive. Probably it costs around 2000 rs per kg. Green cardamom 4k/kg, cloves 2k/kg and cinnamon 1k/kg. Rest of the spices are either cheap(jeera, dhaniya, laal mirch/kashmiri mirch) or used in tiny quantity (jaiphal, javitri etc).

    My mom used the same mixture of garam masala except rose petals and ginger powder and she use to store for long time..Now I understood why she kept under sun all the spices before grinding...I use to think why she keeps on the roof when these spices are already dry..😍😍😍

    We don’t add rose petals and kasuri methi. To this masala we add a kilo of onion ginger garlic paste which is roasted in lot of oil and mix all with chili powder

    Kabhi "SPARSH special garam masala" Powder try karo. Multipurpose hain. Zyaada tarrr meat cooking hotels isko prefer karte hain south mein. Ek alag hi mazza hain. 😊😊😊

    What about adding red chillies lightly toasted? You missed garlic powder.
    In Goa we make what is known as Jeerem meeram pitto, which includes jeera,black pepper, elaichi,cloves,cinnamon and last haldi powder is added.

    This is my home made garam masala :
    Ingredients:
    1 cup Coriander seeds,
    3 tsp White cumin seeds ,
    1 tsp Black cumin seeds,
    2-3 Black cardamom/ Stone flower 1 medium size
    2 heaped tbsp Black peppercorns,
    2 inch Cinnamon stick,
    8-10 Green cardamom,
    8 Cloves,
    1 Star anise,
    2 Mace,
    2 medium Bay leaves,
    3-4 Byadgi red chilli (optional),
    2 tsp Salt,
    In winters add:
    2 large Nutmeg
    In summer add:
    Fennel seed
