I want to join this challenge! Do potatoes freeze ok? I’ve had past experiences with cooked potatoes and they were not good after freezing. Also I miss salsa chicken since becoming vegetarian but I wonder if jackfruit would work...
Yay! So happy to have you join us! Regular potatoes do not freeze well unless you use baby potatoes and freeze whole. Sweet potatoes in these recipes freeze great! Love the jackfruit idea!

Hi Carla! Make sure you are using durable glass (ie: canning jars and pyrex bases) and you should be fine! And like Sue says, leave room for expansion especially for liquid in jars. I leave lids ajar until fully frozen too :)

Salsa chicken, you can substitute jackfruit for the chicken. We make jackfruit tacos all the time. So good.

I always thought that freezing glass was a bad idea, please correct me if I'm wrong.
Glass is fine to freeze, just make sure you leave room for the food to expand. (Actually maybe it's tempered glass).
