Excellent trip report but there is a problem with the B737 max 8 it's the Inability to take off full loads from high elevation airports like Denver as identified on a Boeing report from 2018-2019. The ideal 737 Max version for that situation is 737 Max 7.
The term you're looking for is "Density Altitude" and it affects all aircraft, not just MAX8s. There's a reason DEN has 12,000 foot runways. Part 121 operators almost never carry full fuel loads, especially out of mid continent hubs like DEN. UAL runs countless MAX9 flights out of DEN and they're just fine.
