  • Here I revisit my experiment of comparing double walled pressurized baskets versus conventional baskets in an EC680 by Delonghi Dedica. The results are just awesome with a good basket!
    Make sure to get or make a bottomless portafilter to see the extraction, and a proper tamper as well for your puck preparation.

    I've got a Dedica with the removable filter insert in the pressurised basket. So I just removed the insert, drilled a 5mm hole through where the really small hole was and then replaced the filter insert. Put the basket back in the handle and then in the machine and it worked OK but completely differently from before. I'll post separately on what I did after, which is a lot, but one thing I noticed straightaway is that it is much, much easier to get the used coffee puck (is that the word?) out of the basket. I've got a knock-box with the bar across to receive the used grounds but sometimes I had to hit it so hard that the basket jumped out of the handle. Now that I've drilled out the hole the puck (let's call it that) comes out with just a tap on the bar. I'm sure it's the change of pressurised to non-pressurised that has made the difference because another basket from an alternative supplier behaved exactly the same.
    What is irritating that I have no explanation of what is occurring, in fact it seems counter-intuitive to me.

    • @TomsCoffeeCorner
      @TomsCoffeeCorner  ปีที่แล้ว +1

      Hey Chris! I find that the Dedica knocks out super clean with any unpressurized basket. It is a dream. But I think it is a combination of that and the Dedica not having a 3 way solenoid to release pressure on the puck after extraction. My Gaggia for example does have a 3 way solenoid, and the pucks seldom knock out cleanly. For sure, it also has to do with coffee amount, tamping, and potential surface materials of the basket.

      Hey Arthur, well the problem is that you'd have to take out the black plastic piece of the original portafilter, in order to get the aftermarket basket to fit. Then, you'd have espresso coming out of 3 holes. It's just nicer to saw the bottom off, so that you can evaluate your puck preparation. Thanks for the question!

      I've got an upgrade from my aincient delonghi bar 14 to 685 recently (yes, it lasted THAT long, and it's still operational, in fact 8P), and I did not really like that new double-deck-basket. I tried to use my former original one, and it was fitting. It holds in there, and it brews ok. Although it seems that 685 has lower "shower lid", and the level of the tamped coffe should be lower (otherwise pf won't even lock in place). I'm considering screwing out the plastic nuzzles for now, because all they do is break my crema (and annoy me with the fact that they are plastic).

      @@TomsCoffeeCorner Greetings Tom and thanks for the reply...i appreciate it! I tried searching for the one you suggested but it doesn't come up on the Amazon Spain site. I'll try Germany. Amazon germany does sell a choice that gets good marks but doesn't ship to Portugal (and 70 euro)! while this one i'm sharing the link for below is one of the only versions i find available for Portugal...and partly because i always make a double expresso. There are a few other choices but they often only come with a single shot basket. i did mistakenly buy just the filter and would have to get out tools to make it fit I don't have (and ingenuity)! So this linked one seems to be "the choice" and will take its time arriving. I had a long phone call recently with a Delonghi rep and am pulling better shots now even with what Delonghi provides (however the coffee grounds are staying stuck in the machine in one clump when I remove the filter holder probably because i'm squeezing those 14 grams into the basket when it really only may take 12g or so?? Guess i have to modify until the new filter arrives...and is a "three ear" the right choice? I'm believing "ears" relate to the metal tabs on the edge of the filter holder itself? Lots of new learning. The dedica ec685 model is listed with the three ear version...thanks again and let me know if you have any other ideas Tom.

    With larger pressurised basket and larger aftermarket basket, are you using the same amount of grind in each for double shot? Or does it change because of the pressurisation?

    • @TomsCoffeeCorner
      @TomsCoffeeCorner  2 ปีที่แล้ว +8

      Hey there Reed, i’m glad you’re enjoying your machine! I grind fine enough so that a shot takes about 30 seconds. For my shot, I aim for a ratio of 2 to 1 (15 grams in, 30 out). If you grind too fine, your shot may choke the machine. If you grind two coarse, your shot maybe already finished at 10 seconds.

    nomatter how I tried I always have one of the two situations with Dedica and open portafilter:
    - if the grind is the same as for the pressurized - the extraction is very quick and the result is bad
    around 3,8 on 1zpresso k-max
    - if the grind is small enough to get visually good and slow extraction - 2,4 - the taste is that much bitter that it gets absolutely undrinkable

    Hm. As a new owner of the EC685 i have a question. Does the pressurized extraction "eat" some pressure? I mean, the pump also has to press the coffee through the small hole. This should mean two things: the extraction time is shorter, because there is less pressure lost. So you can/have to use finer ground coffee. Is this correct? Sometimes i grind too fine or tamp too hard, so the machine is really sweating about getting some drops out of the portafilter.

    • @TomsCoffeeCorner
      @TomsCoffeeCorner  2 ปีที่แล้ว +2

      Hey Björn, pressurized means that the pressure is artificially imposed upon the puck, since the liquid can only go through that tiny hole. I guess this would create a very high pressure.
      When you use a traditional non-pressurized basket, it is up to the fineness of the coffee grind and puck preparation to create the proper pressure, which should be somewhere around 9-10 bars. I wish this machine had a pressure gauge...

      @@TomsCoffeeCorner on my Dedica Deluxe the pressurized baskets are two part assemblies. There is the main basket with a tiny hole in the center and an insert with what seems to be a silicone gasket that forms the upper layer with multiple holes. This makes the assembly easier to clean, and makes it easier to widen the center bottom hole in the main basket. I’d send photos, but TH-cam comments don’t support it. Hello there! Dedica is special because you can make a good espresso, despite being an economical machine. However, it does not extract Espresso differently than other machines.
      All machines push hot water through a compacted puck of coffee. On the fancier machines, you can control the temperature, the pressure, and the flow. This machine does not do that. But, it offers a good result nonetheless.
