You must have cooked the paneer for longer I guess, we just have to grill it on both sides for few minutes only as paneer is very soft and cooks faster.i hope this will help, if not pls let me know!

You can use a normal pan also, it's just that you will not get grill marks..but it will get cooked nicely even on a normal pan
