    How To Cook Black or Purple Sticky Rice (Khao Kum)
    INGREDIENTS
    3 cups sweet rice
    1 cup black sweet rice
    6 cups water for steaming
    COOKING UTENSILS
    Sticky rice steamer pot
    Sticky rice bamboo basket
    Rice spatula
    Bamboo container
    *These can be found at the Asian grocery stores or online.
    Using the bamboo basket for the first time.
    1. You will need a large deep pot that fit the basket.
    2. Put the bamboo basket in the pot and fill it with water.
    3. Soak the basket in water over night.
    INSTRUCTIONS
    1. In a large bowl add the white and black sweet rice. Combine these two rice together.
    2. Rinse the rice in cold water three times until the water is nice and clear then drain.
    3. Add cold water and let the rice soak for at least 4 hours or overnight.
    4. Add the water into the aluminum pot.
    5. Rise the bamboo basket in water to remove any residue.
    6. Drain the rice and rinse with cold water.
    7. Pour the rice into the basket.
    8. Let the rice drain for a few minutes.
    9. Cover the basket with a lid.
    10. Place the rice over the pot and steam for 30 minutes (do not let the basket touch the water)
    11. Remove the life and flip the rice over. Covered the rice and continue steaming for 10 minutes.
    12. Turn off the heat.
    13. Use the plastic or wooden rice spatula, to hep loosen up the rice.
    Transfer it to a bamboo container or thip khao

    I love black sticky rice it has a very distinctive taste. It is grown in the countryside where I grow up here in the philippines.

      @@vivianneskitchen5255 when you say glutenous does that mean this rice contains gluten ? I've heard black rice is usually gluten free.

      You can get them from any Asian markets but the quality is crappy. For my family whenever my family members go to Laos they usually bring many back with them. The quality of the baskets are way better and last a long time. To clean the very first time you just soak it in the water for overnight or less then let it dry.

    Wow, in my mother tongue we call raw rice "u khaw" and cooked rice is "ka ja". And sticky rice is "u khaw shawlia" (the last word may be spelled wrong) while cooked sticky rice is known as "ka ja shawlia". So similar khao and khaw! Makes me wonder what else are similar in our languages and cultures? I am a Khasi from the North East of India.

      An Sabaidee that depends. The taste and texture can be harder too if not eaten right away

      No. The difference between the two is the color and texture. Purple rice is harder and not as sticky as the white version.

    From what I know Laos's sticky rice holder never has a white mesh bag on the top, is the new style now?

      Hi Kevin, I don't believe it is a new thing. Some use it, some don't and some will use plastic bag or white cotton cloth. I grew up not using it, but occasionally see my aunties and uncles used white cotton cloth.

    I put it in
    A rice cooker and it came out hard. Why is that. Then i add more water and ut still came out hard. Some on the bottom was burn.

      Rice cookers are mainly used for regular steamed rice

      Did you soak the rice overnight? Certain type of rice require more water to cook.
