To make whipped honey, you should use crystalized honey. Once you have a little crystalized honey, you can pretty much make all honey crystalized with just a little bit of it.
Franny's attachment height needs to be adjusted! Then she will be nice and quiet again! Just turn the screw on top of the attachment thingy to adjust it and the attachment will no longer scratch the bowl! 😊

Hey Rachel, I noticed when you were whipping your eggs 2:40 the whisk attachment is dragging on the bottom of the bowl. It's not supposed to touch the bottom. You can adjust the height of the mixer by turning the screw within the elbow of the mixing head where the head pivots back. Unlock the tilt and lift the head up and it will reveal the hidden screw (It's on the opposite side of where the power cord goes into the mixer). The higher the screw is the higher the mixer attachment will be. Adjust it just so that the whisk attachment misses touching the bowl on the bottom. Hope that helps.

Overwhipping egg whites (until they look like seafoam) is the worst thing you can do for structure, because the bubbles become too big and the egg white structure can't support that and the bubbles collapse:) Rachel's actually looked overwhipped already
sounds like the mixer is scraping the bottom of the bowl, that's why it's soo noisey. At 7:10 you can see one of the wires even popped off the center of the mixer's head. You can look up how to adjust the head of a kitchenaid by tightening/loosening a screw on the mixer. Hope that helps!

Look at Frannys whisk wires- the bottom one is pushed to the side and isn’t in the groove. That’s why she’s so loud ands sounds like the whisk is misaligned (it kinda is) and it’s happened to me too! It’s a super easy fix, just slide the wire back into place.
I believe allulose is about 70% as sweet as sugar. Also it causes me -um - digestive distress if I consume much of it so be warned! It's good for keto baking because it browns like sugar

The cucumbers are a korean thing. They are really good with gochugaru chili flakes instead of chili crisp. Also try salting your sliced cucumbers prior to to remove moisture for around 15 mins, then rinse them off. They get better as they sit in the fridge. My favorite waybof making them is dark soy, rice vinegar, gochugaru flakes, msg, ginger and garlic paste, chives,a few chopped green onions, and cucumber. Delish!
Rachel, you need to trust baking instructions ~ especially when it comes to “alternate dietary” recipes. I’ve noticed that you’ve diverted from instructions on a couple of recipes, in disbelief, and the recipes inevitably fail. Baking is a game of precise chemistry and when you change the chemistry, the correct reactions don’t happen, and you change the outcome. My guess is that the bread needed the structure that would have been added by toughening up those egg whites. I know it’s hard but we’ve got to trust the process. Also, they sell whipped honey at the grocery store. ;-)
My son won't eat meat so I'm always trying to add in protein wherever I can. I make a lot of bread/pizza/bagels from either cottage cheese or Greek yogurt. Sometimes I don't understand the recipe because I'm not a food scientist, but I always follow the directions precisely and they almost always come out!

I understand what you’re saying but for this particular recipe she was probably worried that the egg whites would split and she did take it out of the oven early which probably caused it to fall like she said. But she did say it was good lol.
Baking the funfetti is true! Its the raw flour thats the issue with raw cookie dough and cake batter! When you bake the dry cake mix its cooking the flour. 🥰
For the cottage cheese bread, I've made a lot of keto breads, and what I can tell you if you want it to fully cook in the oven and not taste eggy, you can add 1 tbsp coconut flour, 8gr for me as I am in europe. And after cooking let it rest in the oven turned off 10min. Let it fully (yes... wait some hours until trying to eat it) on a rack for it to release its steam and not get wet on the buttom. You'll have to store it in the fridge, you can slice and freeze as well 😊
For the whipped honey recipe, use the honey at the bottom of the bottle that's almost crystalized. You can whip that into a nice fluffy creation closer to what was seen in the tik tok video!
If you are having trouble with the mandolin, I have been hearing good things about the rotary cheese grater with handle that is all over tiltok has inserts that have the mandolin blade. That might be an easier and less stressful way to cut veggies. 😁
I have one and the main drawback is that the part to put the veggies in is on the smaller side. I dearly wish I could use it for potatoes but I guess cucumbers would be ok.
I find the cucumbers change dramatically if you leave them overnight…they are softer and lose a lot of the crunch I really enjoy. I just slice less and keep a small container of the dressing in the fridge to toss on just before eating. They don’t go bad at all it’s just a texture preference.
I made cucumber salad with cucumber, red onion, salami, chickpeas, olives and then for dressing red wine vinegar , extra virgin love oil, lemon juice , oregano, salt, pepper, parmesan cheese , crushed croutons. so yummy. I usually do this but also add romaine

Just heard on the radio about how good quality maple syrup needs to be kept in the frig after opening. Because there are no preservatives it can develop mold in just a few days. And actually it will say "refrigerate after opening" somewhere on the container. So there's your safety tip for the day hehe😂 💜💙💚💛🧡

For that funfetti popcorn, try adding cake batter extract/flavoring into the marshmallow instead of cake mix next time and still do everything else the same:) you could do it with rice Krispies too. Itll come out alot better. Funfetti is just vanilla cake anyways.

For the whipped honey! You need to use RAW honey. Which means it hasn't been processed or has any additives. My parents own bees and I did this for Xmas gifts last year! ❤

For the whipped honey...Is it real honey that you're using? Sounds weird but many "honey" found in stores is not really honey. Also, the type of honey may yield different results.
I understand the caution and trepidation in using a mandolin however I found that when using one the faster I went the easier it cut and I was less likely to hurt myself. I never used the safety guard or gloves and can honestly say I only cut myself once with the mandolin, but have lost count at the number of times I've cut myself with a knife
Girl! Lol that mandolin part....hold it over a large based bowl or square bowl so it is better anchored and go to town with whatever you're chopping til you get down to where you need to be careful.

There's nothing wrong with the machine 😊 Over time the attachment height can get a little lower, I guess from the vibrations. This can be fixed by turning the screw on the upper side of the attachment thingy (don't know the technical term 😂). Then there will be no more noise 🎉
I can see that the whisk isn't set into the groove that it's supposed to set into. So it may be as simple as popping that whisk into the groove. Mine makes that sound when that happens.
Another tip for the honey, whip it. Then chill it and then whip it again. What type of honey you use makes a big difference as well. Honey from some flowers whip better than others.
I’m pretty sure the “honey” in the bear bottle is more sugar than honey. I bet it you used real honey it would work. (Kind of like if a recipe called for maple syrup and someone used the fake kind of syrup that’s pretty much made out of sugar)
My guess on the "honey". Generally the stuff sold in the bear bottled honey, has corn syrup or some other additional ingredients. That may be why the recipe didn't turn out?
I've been making sliced cucumber salads for YEARS, and now it's a viral trend? 🤣 Rice vinegar, soy sauce, sesame oil, pinch of sugar, adjust the amounts to your taste. Sometimes I add miso or sriracha or dashi. Easy peasy.😋
Yes I can’t believe it’s trending. Don’t get me wrong it’s delicious. I will say it inspired me to try his different variety’s. I did a cream cheese, salmon everything bagel version that was amazing.
I would treat the 'gluten-free' bread stuff almost like a soufflé and water bath it. That will help it rise and stay risen. a touch of cornstarch will help keep the structure of whipped honey.
I wish these viral recipes would give directions for higher/lower altitudes and also the temperature in the home/kitchen. Maybe that’s why the bread recipe needed so long to mix?
In addition to not opening the door on egg whites... I think Owen the oven needs a thermometer and or a recalibrate... or both. Just leave the thermometer forever hanging at the corner of a shelf. :)
My family makes “popcorn balls” it’s the best thing ever to make once in a while. It’s just melted marshmallows with butter then u add popcorn and make into balls like softball size and to not make it so sticky use crisco oil not oil but the crisco shortening on ur clean washed hands add like a tsp bc it is sticky and compress into softball size and there you go u can also add a drop off any food coloring to the marshmallows when they are melted for some color for parties or halloween
Is it just me or would anyone else like to see Rachel remake recipes that failed but with the tweaks or fixes that commenters have suggested? I think the honey recipe will work if she goes with some crystallized honey as a few people have suggested. And there have been other recipes that have failed in past videos that I know I’d love to see her remake.

You can simmer the honey for a few minutes to encourage crystalization and cool it before whipping and get simular results

The bread might have fallen because the eggs white weren’t STIFF peaks. Egg whites are stubborn and particular

What about a video idea where you remake recipes you deviated from and they failed? Then we'll know if it's user error or it is actually the recipe.

You can get a cut-proof glove for use with the mandolin. I once sliced off the tip of my finger and it was unimaginable.

My Mom in Love makes honey butter that whips to a thick tasty consistency. So good on dinner rolls or breakfast toast

I saw someone doing something similar to the cucumbers, but with apples. She adds yogurt and whipped cream and other toppings and it looks delicious every single time. She calls them trashcan apples but they look like the opposite of trash.

Yes, for the honey, your definitely need to use honey that is starting to crystalize!
I'm from saint lucia which is in the Caribbean. We kinda have this as a regular for bfast but we just do cucumber, vegetable oil, grated garlic and salt, it's delicious and be generous with the garlic and salt. Let it sit for mayble 5 to 10 minutes and it's 10/10. We'll normally have it with eggs and bread
Hi from what I read you whip honey with crystallised honey, 1-1 ratio for an hour, then let rest for an hour, then whip for another 20 minutes. It will thicken up when you put it in the fridge

I mean, if you change the ingredient amounts, brands, or cooking times, of course the recipes will be different and more likely to fail, lol. My mom has that bad habit too. It's always a guessing game if it'll work or not.
For the whipped honey...Is it real honey that you're using? Sounds weird but many "honey" found in stores is not really honey. Also, the type of honey may yield different results.

I understand the caution and trepidation in using a mandolin however I found that when using one the faster I went the easier it cut and I was less likely to hurt myself. I never used the safety guard or gloves and can honestly say I only cut myself once with the mandolin, but have lost count at the number of times I've cut myself with a knife

Girl! Lol that mandolin part....hold it over a large based bowl or square bowl so it is better anchored and go to town with whatever you're chopping til you get down to where you need to be careful.

Over time the attachment height can get a little lower, I guess from the vibrations.
This can be fixed by turning the screw on the upper side of the attachment thingy (don't know the technical term 😂). Then there will be no more noise 🎉

I can see that the whisk isn't set into the groove that it's supposed to set into. So it may be as simple as popping that whisk into the groove. Mine makes that sound when that happens.
There is a guy who gives tips, and even has a few small things that can help the mixer. His name is literally Mr Mixer.
Another tip for the honey, whip it. Then chill it and then whip it again.
What type of honey you use makes a big difference as well. Honey from some flowers whip better than others.
I’m pretty sure the “honey” in the bear bottle is more sugar than honey. I bet it you used real honey it would work. (Kind of like if a recipe called for maple syrup and someone used the fake kind of syrup that’s pretty much made out of sugar)

I make a similar cucumbers all the time. A knife works fine. The mandolin isn't actually necessary.
My guess on the "honey". Generally the stuff sold in the bear bottled honey, has corn syrup or some other additional ingredients. That may be why the recipe didn't turn out?

Rice vinegar, soy sauce, sesame oil, pinch of sugar, adjust the amounts to your taste. Sometimes I add miso or sriracha or dashi. Easy peasy.😋

I would treat the 'gluten-free' bread stuff almost like a soufflé and water bath it. That will help it rise and stay risen. a touch of cornstarch will help keep the structure of whipped honey.

My family makes “popcorn balls” it’s the best thing ever to make once in a while. It’s just melted marshmallows with butter then u add popcorn and make into balls like softball size and to not make it so sticky use crisco oil not oil but the crisco shortening on ur clean washed hands add like a tsp bc it is sticky and compress into softball size and there you go u can also add a drop off any food coloring to the marshmallows when they are melted for some color for parties or halloween
Also add cream of tartar for better stiff peaks, and adjust the height on mixer
Maybe the honey didn't work because you used runny honey. In the UK, we have set honey. If you have it too, that might work better ❤

I'm 67 & had whipped honey when I was a kid. It's not new.
Is it just me or would anyone else like to see Rachel remake recipes that failed but with the tweaks or fixes that commenters have suggested? I think the honey recipe will work if she goes with some crystallized honey as a few people have suggested. And there have been other recipes that have failed in past videos that I know I’d love to see her remake.
