Iranian Vegetable Stew (Khoresht O Giahee) - Cooking with Yousef

  • Hi friends, today we are making one of my favorite vegan dishes I call Iranian Vegetable Stew or Persian Vegetable Stew (Khoresht O Giahee).
    This is a one-pot dish & you can of course substitute any of the ingredients for things you prefer.
    This is served with bread, or over rice and you can have it anytime. If you make it, please let me know how it turned out!

    Ingredients List:
    • 2 Eggplant
    • 4 Tomatoes
    • A few Bell Pepper
    • 1 Onion
    • 4 Cloves of Garlic
    • 1 can of Pinto Beans (add more if you wish)
    • 1/2 Teaspoon Red Pepper
    • 1/2 Teaspoon Black Pepper
    • 1/2 Teaspoon Cumin
    • 1/2 Teaspoon Curry Powder
    • 1 Teaspoon Paprika
    • 1 Teaspoon Salt
    • 1 1/2 Tablespoon Tomato Paste
    • Cooking Oil
    • Parsley for Garnishment

You won’t believe that I just prepared all these veggies to cook our national dish “ guvech” and I found your video just in time! 😅 I will add the beans 🫘 according to your recipe now and all the spices too. Thank you very much! Again you gave me the inspiration and the idea to make this dish a little different and more interesting. ❤😁👏🧑🏻‍🍳

I do know in the north of Iran they have a lot of vegan dishes and they use walnuts to replace meat. Can I replace the beans for chickpeas or garbanzo beans? Thank you so much!🙏💚

      Just regular curry powder. I use Sadaf brand but you can use any that you like.
