Check both the fuses under the steering wheel and the ones under the hood. Just a thought, could be the aftermarket headlights that are blowing your power. Disconnect them, and start your car without them. May not be it, but worth a shot.
I know this is unfortunate and also really late being a year old but, for anyone else suffering from issue like this in their own z I would take it to your nearest dealership because there is a rare grounding problem. The ground terminal bolts to the body under where the battery is housed and will come loose and cause weird electrical problems, my brother in laws wouldn't charge and when it did would keep the car in limp mode( when the car will only go so fast) hope this helps someone.
If you haven't figured it out it could be the condensation in your third brake light. I had condensation in my f150 led taillight. It blew my blis module and killed everything in the truck. That condensation in your third brake light could have killed a computer or sensor somewhere
Meter fuses in your cabin fuse box. Would swap out both first (just replace them) and see if that clears up the gauges. Not sure about the car dying though.

It could be something with the ignition switch since it's not powering up the gauges and not telling the alternator to charge. I would remove the GTR ignition switch and try the old Nismo one and check all the fuses.
StockBoys It happened a few hours after I put on my aftermarket exhaust and a mechanic was saying it’s my cats or my exhaust that caused the car to go in limp mode then I realized my brake lights wouldn’t turn off even after I turned the car off and another mechanic took a look at the pedals and found the problem with the brake pedal and fixed it for me. After that no limp mode ever again

Zs do have their issues but this is not one of them. I'm assuming maybe you installed the headlights wrong (I mean that in a nice way) or they conflict with the oem electronics and power.. or the morimotos are still taking power when the car is off, bad relay? I'm not good at electronics but this is my best guess. Also I just got morimotos and I'm scared to install them now 😂😐
