I watch all your videos and love the fact that your recipes are usually not designed to make a ton of food. Since I'm single I appreciate recipes that make enough for one or two. My boyfriend often makes japanese style curry for me and I love making tonkatsu, which is the pork version of what you guys made in the video. I often make the tonkatsu to serve over the curry leftovers the next day. I'll definitely need to give this recipe a try and surprise my love with it! Thank you boys! A good way of cooking rice so you don't have to worry about it getting sticky is to rinse it first then half cook it on a high heat. Drain the water and immediately put it back in the saucepan and cover. Leave for another 10-15 minutes and the steam will fully cook the rest of the rice and it comes out nice and fluffy. I realise a lot of people have mentioned the rice in this dish should be sticky anyway but I thought I'd share this as it's been really useful for me in general.
Something that I've always wanted to learn how to cook is onigiri - the rice balls with the seaweed on them. I've heard you can get kinda creative with them and I wanna see how you guys would do it. :)
well i think another good point about the cubes is that it takes up very little space and you can buy a bunch of different ones(beef, vegetable, chicken, fish, turkey) and use it whenever in a pinch. I would also use boxed/canned chicken stock if possible but it's also more expensive(even slightly). Just small ways here and there to save some money

made it two times already! first time used onion paste that i made myself and second freshly chopped onion and i have to say paste doesn't give sauce that "onion sweetness" as chopped onion does, its getting more steamed or boiled in pan rather then sauteed. though maybe its just me...:) still loved it!

I made this tonight but did not make a roux for the sauce--it didn't need it because I used authentic spices in the bloom, and blitzed it with my now yellow immersion blender, Fantastic flavour.
Mei Kiengsiri the carrots and onion here is to impart flavoring. Not as a vegetable. When most people cook kare, they use roux paste. The onion (onion power) and carrots is already in the roux mix. Since they're doing the roux from scratch they need to blitz the onions and carrots to get a sauce with the fullest flavor and the same silky texture you get from a roux-based sauce. If they want to add in carrot or potatoes that's optional.

You can't skip the chicken stock but you could swap it for water maybe (the liquid is needed).

I make my Katsu Curry similar to this however i use crushed cornflakes to coat my chicken breasts and it comes out very crispy and delicious!

katsu curry in my country also has potato and carrot chunks in the sauce, and we don't blitz it up, we love texture!!!
