Bakery specializing in home-cultivated leaven (sourdough) opened in 2021 in a 140-year-old renovated private house.Azusa Omori starts by kneading the dough for all bread by hand.
She also does not use a fermentation machine, but instead controls the temperature in the room and the placement of the dough to achieve the best fermentation conditions for the bread dough. She then bakes the bread and cookies in her own wood-fired oven. On weekends, Omori's mother helps out at the store as sales staff.
Omori trained at the famous Okinawan bakery Munakata-do, and then at the farm bakery "Chantou La Vie" in Normandy, France.
She says her first encounter with "Country bread" was when he was a kindergarten student at a school where "Nova" was selling "Country bread"

bakerman here from germany. i am used to have 20 different machines around me . and 3 types of ofens. i processed 500 kg flour a day. but she is a superhero bakerwoman for me. ;))) greetings
This is not a film about baking bread, but about a way of life captured by someone who has an eye for this, rare and beautiful ❤
Thank you for your insight into the essence of the matter and your ability to express it.
Indeed. It was quite clear that the bread was an abstraction (forgive the clumsy language). However this was a very excellent video.
Perfectly stated
I even liked her wood stove.
It's hard to find a natural bread maker today. She makes her bread naturally all from nature. Love it ❤️
Definitely!
❤@@reiyawatanabe
What commitment, dedication and enthusiasm the lady gives to her work. She is a credit to the village. Well done.
And I have enjoyed watching the breadmaking skills that are shown in the video, Thank you.
Thanks for watching and a good message!
I think she has a lot of customers, because she is very good at what she does!
No doubt!
Beautifully filmed. Seeing her move effortlessly, listening to the passion. Wish I could smell the place.
Thanks for watching it!
I'm so happy that not all Japanese people feel like a corporate job is the only way to thrive. I love people who make things, food or otherwise.
I want to live like her.
Its so wonderful to see her artisan in baking, her very hard work ethic also how we don't need all the frills and fancy machinery to bake a great tasteful product.I much prefer her way of life even the little cafe side of the bakery is so charming. Thank You for sharing with us. I really appreciate & enjoyed watching.
Thanks for your heartwarming comment.
Made with passion and skill, beautiful to see.
If it's one thing I love to eat , it's bread...and this vid gots my mouth 🤤😋🤤😋...!! Thank you for sharing my friend...🥰🙏🏽❣️

Wow, she is amazing. Beautiful video.
Thanks!
Wow! This was sooo wholesome, i cried! It was such an incredible feeling seeing her happy un her space and sold out!! 😭 Gives me the inspiration to start my own micro bakery. 🙌🏻😊
Thanks!!!
While watching this video I was reminded of a classical musician, dedicated to their art, and how they are inspired to a way of life. Baking bread as she does is a way of life and art. A beautiful video.
Baking bread is life itself for them. It's a philosophy.
@@reiyawatanabe and to us
I truly hat out to this girl. She works hard and smart. 🎉🎉🎉🎉🎉🎉🎉 BTW, Many thanks for your inspirational sharing.
Fantastic to see such dedication, no wounder the lady is slim I bet she is as fit as a Gymnast with all that work, Lovely to see the old ways of craft, love and skill. GT
Wonderful to see a real artisan at work thank you for sharing ❤❤❤

Me,too.

She's baking real bread!!!
It shows the the true love for baking.❤
Yeah!
I really enjoyed this video, the lady makes lovely sourdough bread. I can watch bread being made all day. I almost want to get on a plane and fly from Australia to Japan to taste her bread. 🙂
Yeah, you are welcome!!
Waoooo , what a Great woman , blessings ! ❤😊
It was a joy to watch the lady making authentic bread and running a charming bakery from home. A very natural way of life that involves hard work but lots of joy and satisfaction, unlike the corporate rat race. Wish her good health and good luck! I watched two videos of Japanese bakers and both were trained in France, just curious if Japanese bakers try to get trained in France as the country is known for their bread and pastries.
Beautiful and Inspirational 👌🏼✨
Great work ! Wish her the Best and More ... ( From Irvine California, USA )
I love her setup. Simplicity is best. Her hard work is appreciated. Thank you for sharing. Look forward to watching more of your videos.

Thanks for your kind comments! It will encourage me in my future video production.
Happy birthday Elizabeth! We just love your posts. Good luck for the season. We love Peppe's segment and would love to hear more about the Roman past. Love from Australia!❤
Excellent.
Thank you from Oregon, USA.
Wow, I am deeply intrigued by this unique lady, her skill, dedication to her art. Truly memorable !! From Singapore.
You should come here
I love her dedication and satisfaction of the resources she has. The baking of any bread or sweets, must be excellent especially made up in the mountains and with her warmth. Bless your future, I wish I could try your baking.
Thanks you for the good message!
These master Japanese bread makers that do everything by hand is truly lovely. What does astonish me a little bit though is how dominant French breadmaking is in Japan. Whereas it is commonly known in Europe itself that Germany is the premiere breadmaking nation. There is no other place with as much variety in its bread.
Super interesting how France still has the better reputation in Japan. Maybe it is because Japanese tastes prefer white bread....?
Thanks for giving me some insight. It's well known that there are many types of bread in Germany. But my understanding is that the Japanese like French first and foremost. So I think a lot of people go to France for bread training.
Yes. That's what I am observing, as well. And I find that very interesting. I love these little cultural quirks and interpretations of other cultures. How things are taken and shaped into something new.
The only videos about German style bakeries I have seen, have always been German immigrants. I don't think I've ever seen a Japanese person learn from German bakers. Like you say it's always France. So interesting!
Obst's owner whch is one of my video trained in Germany and has made german breads.
thank you, yes! That video was actually just recommended to me yesterday as well. So good! :)
A Master of Bakery!
She is lovely and living my dream. Great job on filming and posting this!
Thanks!

Thanks for watching the details. I received your support from Canada.
Amazing
Thank you. I didn't know places from around the world paces had food. I wanted to go travel ❤ because u film on youtube more people are coming that will help ❤
Thanks!
Imagine the smell of that place 😊
It reminds me of my pottery. I think I fell in love with her,😊 you work hard lady and your ethics to your craft are impeccable. I salute you.
A medieval baker could time-travel to her place & just make bread like how he'd always done!
I think i could retire at a place like her's & simply make bread 'til i grow old. I just love how she takes her time making bread all by hand, with barely minimal technology & without the pressure of making too many types of bread in a day.
Thank you for sharing & thank you for keeping us inspired, Reiya-san. Arigatou gozaimasu!
Thank you for your comment. Thanks also for giving me a good representation. It really is beautiful to see the craftsmen!
Sometimes less is more= we are just so bombarded with choices

What an incredible young lady. Watching this made me so hungry! 😂

Wondrous ! We have lost this art.
so fun she is
A truely amazing artisan. ❤
I love bread....a Staple food for Humankind over Centuries....👍➡️🇬🇧
You are right!!
Great film!
Thanks!!!!
I never expected that in Japan they eat bread. I've never seen a restaurant serve bread but endless rice balls. They seem to feed the tourists with rice and hide the good breads in the mountains. Perfect well-baked breads remind me of the loaves made in the Mediterranean countries. Tiring work for a girl but she does it perfectly. Congratulations.
Thanks for your humorous comments!
Japanese people basically eat bread for breakfast. There are many bakeries in town.
@@reiyawatanabe Be well, thank you for the information.
@@reiyawatanabe But you open at 11:00? So your customers are buying bread for tomorrow's breakfast?
That's is typical Japanese customer's behavior. Bread is not staple food
Gracias REIYA!
Thanks!!
❤ so gut ❤
My mother baked her own bread when I was a kid, now old 85.
Yeah, its true
Wir freuen uns auf den nächsten Film!
Nochmals vielen Dank fürs Zuschauen!
Watching this video is so calming and peaceful. Was falling asleep🙏🏽🙏🏽🙏🏽❤️❤️❤️
What an incredibly stoic person. Not just baking but ensuring all requirements are met e.g firewood for the oven, constant cleaning a spotless shop and not a complaint in sight. A timely reminder to the current generation of apathetic whingers. More power to you madam
That's right!
man, your camera work is so good, too good bro ..the way you filmed her .cheers from nz
Thannks!

When does she sleep is my question,,, she works so hard- good woman~
I’m trying to imagine the amazing smell that comes from her fresh bread. What an amazing talent this woman is
Yeah, I think so too!
👍👌👏 Oh WOW, simply fantastic! What a beautiful, hard and effective working woman. She obviously has a lot of dedication for her products. ! I bet she makes/prepares her own kindling and firewood too. Not much income for a hard day's work. But she nevertheless looks happy.
Thanks a lot for making teaching explaining recording editing uploading and sharing.
Best regards luck and especially health to all involved people.
Thanks for a warm message to us! I wish you the best of luck as well.

Next time put a curtain or some kind of cloth across the ceiling closer down to the concrete wall that way the heat will not rise up to the ceiling and the heat will stay below the concrete wall and heat the other room faster in the fermentation faster and you will keep the heat lower in the room where you need it in the winter time
Another beautiful example of a Gueulard oven. A type of oven rarely seen outside of France. The only modern ones (ie. recently build) seem to be in Japan.
I wonder who makes them in Japan.
Bakers who uses this type of oven made it by themselves as far as I know.
👍👍🎉🎉
