I mean... even if she would drop that medallion into the water, the crew of the pearl can simply walk under water for a unlimited period of time, so they could find it anyway. Plus, they are still in the port, the water is shallow...

They wouldn't find it. It was night. And even if they waited for sunrise a sea animal can find it faster and steal it. Also Barbossa wasn't sure if the crew would find it before the British Navy attack the Black Pearl it would be too risky 😂
