@@andrebrown1753 I've honesty never seen unpeeled baby potatoes in a curry goat dish. We usually peel medium sized potatoes and cut them into small cubes. Maybe that was his own personal twist as a time-saver or something

If you grew up in a culture that is very different to the culture of your origin, then you will begin to pick up on their mannerisms. Love the fact he didn't use too much garlic. Garlic flavouring should never be too pronounced. It can ruin the balance of dishes.

I know your comment is old. But in the Caribbean we tend to use chicken for stock since it wouldn't be considered a waste.
