I haven’t made curry goat 🐐 in years. I find the smell of the goat here is very pungent even after washing it. I only eat goat when I am in the Caribbean.😮
Please wash it with some vinegar and lemon juice just add like 3 Tbsp and some lemon juice wash it 2 times Pat dry it with paper towel and smell it afterwards. Fresh

Bell pepper and carrot has very strong flavour it take away from the authentic flavour of the Goat. These days I see most people are putting bell pepper and carrot in everything , even stew peas. Now to answer your question, ME and the good Jamaican cook
Overcooked. Too much water added the first time. What you did was to extract seasoning absorbed through equalization which the seared meat will not reabsorb readily. Add water a little at a time. Good job nevertheless. Next thing is you don't need to force your Jamaican accent. No carrot, no bell needed. Good job overall. I man like it. ❤️❤️❤️💯💯💯🇯🇲🇯🇲🇯🇲
@ Boil for five minutes, then drain. It helps with the rankness and gets rid of some of the fat. Goat needs to be cleaned with limes and lemons too before cooking. Distribute them over the meat and leave for about 15 minutes before washing. Wash until all the bloody water is gone. At least that’s what I do.

I never add coconut milk in my curry goat. It doesn’t need it, that’s just my preference. If you add it it’s up to you.
The authentic flavour is just our Jamaican way. The flavour of the curried goat does not need additional flavour enhancers. 🤣🤣🤣💯💯💯🇯🇲🇯🇲🇯🇲
Jamaicans dont put coconut milk when cooking any meat. We do in shripms, salt fish rundown,(oil down) but not red meat.

Because it was still hard, it needed to be tender before you add those veggies.

No way that's 3 tbsp oil. Looks like 1/4 cup or so. Paprika in yellow curry? hmmmm to each his own though. But over all looks good.

Too much curry powder and turmeric for the amount of meat. Tip: steam out the goat first to get out the rank taste.
