Making Kumquat pickle in 2 ways - Sweet and sour and Kumquat pickle

  • Hi all
    While we were in the stores over the weekend we saw a lovely bag of kumquats on the shelves so we decided to get 1kg and pickle them!
    This is a much requested recipe as well as a seasonal use of the fruit.
    Ingredients
    1 kg Kumquats, divided into 2 500g portions
    Sweet and Sour Kumquats
    500g Kumquats
    For the syrup:
    2 cups white spirit vinegar
    1/2 cup sugar
    grind of slat
    2 tbs maizena (corn flour) dissolved in 1/2 cup water
    For braising
    1 tbs oil
    1 tsp mustard seeds
    1 dried chillie, broken up
    1 tbs pure chillie powder
    1 tbs pickle masala
    Kumquat Pickle
    500g Kumquats
    Soak overnight with
    1 level tsp fine salt
    1 level tsp sugar
    2 cups white spirit vinegar
    2 tbs pickle masala
    1 tbs pure chillie powder
    3 cloves garlic, sliced
    1 cup oil

    Hello Mrs devi I bought a jar of kumquat pickle, I threw it away, I will go Wednesday and go buy a sack, Mrs devi do you sell these pickle, you are so so accurate and precise with your recipe, pranesh must be enjoying your treats lol, I love both recipes mainly sweet and sour, I was wondering why this pickle I bought looked black, and I can't eat stuff that triggers joint pain, also Mrs devi I think pranesh must invest in this is how we roll recipes book, it's alot of work, but the Indian delight was too, just an idea because you have knowledge of other stuff as well, besides the snow, 😂🎉

    Thank you for putting this up. Could you please put up a classic Durban Samosa recipe. I used to love those small triangles of deliciousness. The Samosa we get here in NZ are stodgy, tasteless potatoes things not always but on the whole. Have a nice day.

      Hi Chota. Here's a fun fact from Pranesh. You mention orange and did you know that orange the colour is named after the fruit. The name for orange comes from the Sanskrit Naranga and when Persian traders took the fruit they called it naranj. Before orange, the old English word for the colour was red yellow or yellow red...

      @@GaithreeDeviLuckan 100% agree with Pranesh.Before oranges were introduced to the English-speaking world the color known today as the orange was known as "geoluhread" which meant "yellow-red".Is that why people with orange hair are called redheads?By the way in Mauritius local oranges never turn orange color when ripened it stay green with yellow blemished n is still very sweet peoples don`t buy they prefer their CAPE fruits from SA.

      Don't u have to remove the seeds first...kumquats have quite a few seeds in each fruit

    Perfect timing!! We have a tree laden with kumquats.I love the sweet and sour version which I am going to attempt, using your simple recipe.

    These pickles came out great, I made both kinds. Do you need to refrigerate the sweet and sour version?

      Yes the roasted sesame seeds give a nice nutty flavour to the pickle.

    How long will it stay good after making this

      @@raynierllewis2827 hi easily 2 months and maybe longer. One thing to avoid is getting any moisture in. So no wet spoons. Also make sure your containers are sterilized before storing

      Hi there, you can if you prefer that but with the small fruit and my arthritis I left them in and when we eat the pickle we pick them out as we eat.

    What prevents Pickle from going off in the fridge? The vinegar or the oil. Or should we just make smaller batches so it gets finished quicker?

      Most common reason is we put the spoon to our mouth and back in the pickle which should be avoided at all costs as this causes the pickle to go off.Another reason is if you intend keeping it for a long time it should be covered in oil over the pickle and can be kept out of the fridge for months.

      You want to keep the level of the oil above the pickled kumquats as much as possible. With any pickle if the air gets in contact with the pickled fruit or veg it tends to develop mould and spoil. Then as Sylvia says introducing moisture is also a way pickle spoils.

      It may be the type of lemon you have that has a more bitter skin. Do your lemons have a very thick skin?

      There are seeds in the fruit that are hard to get to. We pickle the fruit and when eating the pickle know that the seeds are still in so are careful as we eat them.
