He'd catch a bucket full and then we'd go home. Mom hates smelt because she was stuck with cleaning those smelt, alone. She didn't know how to filet. But dad would then roll the headless fish in egg and then flour them and fry them in a fry pan. The house would smell of frying oil for days since it was too cold and wet to keep the windows open. Hello Gentleman. I'm about a hour & a half from Chicago (By Starved Rock State Park) I remember as a young girl my Dad & Uncle would bring a bunch of smelt home. My mom & I would clean it and we would beer batter it along with onion rings. Thank you for bring back childhood memories.

I used to catch those by running through the school, dragging my dip net. I'd get 1-3 each pass. I don't know how I didn't break an ankle running in that shallow water and rocky bottom. They were delicious.
Clara Depression Era Cooking brought me here. He's really classed things up. I'll be making this one for sure. Did anyone else make it? How was it? Did you eat the smelt whole with the head and entrails and bones and everything?
You don't do yourself justice, by calling this recipe, "Salt and Pepper," Smelt Fish. It should be called, "BEYOND," Salt and Pepper Smelt ! It looks so simple but delicious ! Can't wait to try this !
Never eaten smelt. I always just used it to catch salmon. I imagine on its own it tastes like a light saba..? That dish is quick and looks delicious. And you're right that at $3 it's a a total deal. For $6 or $9 you could feed a family. I imagine that would go well over rice, even brown or wild rice.
Hiro didn't need to remove the individual fish bones in the middle? Is it because it is tiny enough that when he deep fried it, the bones becomes crunchy? I love the sound of the veggies being cut.
hi you guys. OK i know im abit late but iv seen some videos where you two mix and do videos with you-tubers like deer meat for dinner. maybe is it possible to do more of them with him and other you-tubers as well it would be super fun for us and even more fun for you guys too because i see hiro's face smile even more in cal lab videos. oh buy the way loved this video to you guys always do great meals keep up the good work you two:)

My dad and I used to fry these and eat them by the dozen. Great to hear that smelt frying is common across cultures. thanks for the new recipe!
Chef Hiro, you never cease to amaze me! You're a rock star EVERY time!! Looks so good. Thanks for sharing

Good afternoon everyone
i just caught 100 lbs of this stuff this weekend, keeping half for bait, smoking a couple batchs, then gonna try some of these recipes!
How was it?

After frying, try putting it on a cooling rack. Maybe it will come out with better results.

Justin Y. Hi Justin, didn’t expect to find you here but tbh, it wouldn’t be a TH-cam video without you, hope to see you on the next video I watch!
The Cameraman, panic rising in his voice, "Everything Hiro, EVERYTHING!" Waste not want not. :)
Takes one bite, spits it out and exclaims, YUCCCKK!!!
Please send some to Australia Hiro and Charles!!! 🤗
No fair, your foods always make me hungry..!
G88D AFTERN88N Chef, Quick and Nice looking dish. Thanks for the video Hiro.
I used to catch those by running through the school, dragging my dip net. I'd get 1-3 each pass. I don't know how I didn't break an ankle running in that shallow water and rocky bottom. They were delicious.
salt n pepper n hiro in the リムジン
Looks so good!!! Is Chef Hiro still working at nove kitchen and bar??
Have you ever made snow crab........very delicious.
Thanks I bought two packs of these big smelt and was going to throw out one because of the bones.
Clara Depression Era Cooking brought me here. He's really classed things up. I'll be making this one for sure. Did anyone else make it? How was it? Did you eat the smelt whole with the head and entrails and bones and everything?
No! Cleaned. I even saw some eggs. The cats will have a treat tonight!
Looks so good 😍
that looks good
What knife is thaaat?
You don't do yourself justice, by calling this recipe, "Salt and Pepper," Smelt Fish. It should be called, "BEYOND," Salt and Pepper Smelt ! It looks so simple but delicious ! Can't wait to try this !
You take out a net and you can catch them all
Wish it was the same with pokemon
Never eaten smelt. I always just used it to catch salmon. I imagine on its own it tastes like a light saba..? That dish is quick and looks delicious. And you're right that at $3 it's a a total deal. For $6 or $9 you could feed a family. I imagine that would go well over rice, even brown or wild rice.
hero u did it again....from this viewer looks so good....just a suggestion if u read this....what about a very satisfying pork dish
I think onion will make it even better. Onion+redpepper+ black pepper+garlic is a perfect combination.
similar to a tempura love it :)
It looks soo delicious n tastyy ❤❤😍😍👌
Great work Hiro ❤😊
Looks so good, chef🍺🍺
Wish camera man would show his face he sounds like a doll
Hiro didn't need to remove the individual fish bones in the middle? Is it because it is tiny enough that when he deep fried it, the bones becomes crunchy? I love the sound of the veggies being cut.
Mr Terada.... you are a Master! 👌😁
can you do a salt and pepper squid dish next hiro!
I want everything!
Looks good 🍴
