Wahoo is best served raw, collard and other cuts are perfect for grilling... Still you have to know what you're doing seeing an over cook the fish.. first-class job you guys are doing there
The chef would probably be able to teach you a few things reed man i vote u bring him a whole fish and let him dismantle it in a mor traditional way and cook a great dish for you
Reed, you know it all too well. It's all about how that fish is handled when it's caught, the ice slush and the brine before that fish reaches a cutting board... We are always thought his kids to respect the fish and handle it extremely well, brain bleed ice slush unless it's Big ten and they need time to cool down on the deck before you put them on ice
