    I’ve always filleted triggers using that method. Some old dude I know said to use a box cutter😂. Yeah, ok…Great tip on the throats! Can’t wait to try that! Thanks.

    Amen brother, I've been preaching at the people for years to never let your filets or any part of the cut fish touch freshwater.. I live across the street from the beach sometimes I'll fill up half of a 5-gallon bucket and rinse all my fish in the seawater. You always on point Reed🤙🏼👍🏼

    I just found you a show. I think it’s phenomenal. I used to clean flounder up in Boston Harbour, thousands and thousands of them it’s definitely an art to clean fish like that. Congratulations son.

    Awesome Video, and really like the bit about the brine! Can you do a short video one day on how you keep your knives so sharp? All i use is dexter knives but never can get the edge back on them when they get dull.

    Being born in the Virgin Islands 🇻🇮 this is still my favorite fish to eat. Most of us here eat our fish whole and as a kid, the bones from this fish is super easy to remove when eating one of these.

    I’m 77, I believe I’m a little older than you. I never thought of chef is being Trash fish. But then again, I never listened to people when they said that certain fish was trash and not good eating. I always have to try for myself. Triggerfish is delicious, and it makes fantastic sashimi. I also eat and love skate, Ray, and numerous other fish some of whom are very bony. We in America just don’t realize how much we are missing.

    Thanks great video. We catch and eat a lot of leatherjackets i Australia we chop the head off and peel back a bit of skin grab it with pliers and you can take the whole skin off in one go. You then get a whole fish with the fins but no skin. Leatherjackets are usually a lot smaller than trigger fish so it is a good technique for smaller fish. I'll give your method a try at some point. Interested to know if you have tried this skinning method on a trigger. Also good to hear you plugging alternate fish. I have noticed all over the world th at fish get ignored just because of historical reasons. I lived in dubai as a kid and there barracuda was considered a good catching and eating fish but here in Australia it is considered nuisance fish.

    ABSOLUTELY AGREE! I discovered the Table Qualities of Trigger Fish back in the mid “90’s” on a Lark…
    I had caught some especially large Triggers on a Headboat trip and asked the Fish Cutter (Mack The Knife) if they were worth taking home. The old man Looked Around, Leaned In, and said Conspiratorially… “Some of the Best…”. And then he showed me how to cut em. And they were AWESOME! GRILLED OF COURSE!
    Side Question: do you also rinse Freshwater Fish in a Saltwater Brine?

    For a while, in my retirement, I worked at a grocery store as a cashier. 99% of my customers were all dryland because that’s where I lived. They had seafood, shrimp, scallops, and ocean fish I would give them a hint on how to fix fish. Tell them to wash it in salt water before cooking. With shrimp you could add a little bit of lemon juice, but doesn’t need it. I would tell them that the saltwater brings out the flavor of the fish and removes any unpleasant flavors. Thank you for confirming what I’ve always known.

    Pro tip on making that salt water slurry. It’s an important but often overlooked technique for processing fish. Great work, my man. Keep ‘em coming !

    Perhaps an interesting tidbit, the stiff bone you removed from the throat can be made into a rustic letter opener. Remove as much flesh as you can then soak the bone in straight bleach until the bleach removes the remaining flesh and bleaches the bone to a nice white color. Then use the bone as a letter opener.

    From the Cayman Islands, we strip the scales off like how you strip hide from deer. and eat them whole. didnt know you could just fillet it straight.

    suggestion : triggerfish lasagna made with triggerfish filet, spaghetti or noodles and ricotta cheese. about 3 layers of those 3 ingredients, bake and eat.

    I hold the record for the most number of boxes in one day I did 67 boxes mixed trawl fish I started the day with 40 boxes of flathead I was working for a busy shop in the markets we were on $10 a box the filleters don’t get as much now most get $170 a day for 11 hour day Xmas eve we start at midnight and work till 6 pm people ask silly questions one customer asked the girl where did that fish come from she promptly replied out of the cool room our cool room held 200 boxes of fish I am retired and have to have surgery for a hernia you have to eat well

    easiest way i think, insert knife in pooper hold or just under the trigger and fillet as u would any other fish

      This is one wheel that you cannot reinvent. Once you actually fillet a triggerfish then you will see this method is the right way. And this guy does it for a living. I filleted fish for donkey's years and I always learn something from Reed

    At 5:17, can you use this method on other fish like snapper, drum, grouper, etc? I always have a hard time going through that section of bone for the collar/wings of all the fish i catch

    Just added another nugget of info to the salt water fishing game. Had no idea fresh water rinsing effects quality, now I do. As for the triggerfish cleaning, thank you. I love using trigger for ceviche but struggled with the cleaning. Can't wait to catch another one now and test this method out. As for the throats, that's a new one and be checking into that! My faith is restored in the internet lol

    1. Is that throat now boneless the way you did it??
    2. Where the heck does one get TF that big?? In SW Florida, the legal minimum is 15" to the fork, but I'll catch 100 before I find a barely legal keeper.

    I see guys constantly spraying down their fish with freshwater and it drives me crazy. People spend tons of time and money catching fish and they cant spend 30 seconds and a dollar to make a saltwater wash.
