    About that Alabama mayonnaise thang. I've been here 55 years and I know for a fact that using mayo on BBQ is the quickest way to get your southern card revoked. The white sauce is used around Huntsville in North Alabama, which attracts a lot of yankees to work in the space and aeronautics industry. Them thar yankees been messing with peoples brains for years up there. Hence; white BBQ sauce. LOL.

    The Spanish did not find “American Indians” cooking, they found Taínos, which invented the form of cooking and also the name “barbacoa”. He might be an expert, but he has to do just a little more research and get his facts straight. Exactly how did Columbus find “American Indians” cooking in Cuba????

      He said " Indians ", not " American Indians ". The word Indians is used loosely as a term for indigenous peoples anywhere , not just in North America.
