- I ate these meals everyday for a week. I drove to the Everglades where there wasn’t anything around, so I didn’t even have the option to stray from my budget at all.
I will soon probably have to take a break from traveling to go build up my accounts again. I’m probably going to head to Michigan in April to work for a month straight and then get back on the road.

I’m a generic brand bitch - that said, there are certain items I always buy brand name for but for the most part I default to generic.
Also the egg thing has the do with the natural barrier the eggs have when they’re laid. Commercial farms wash their eggs, destroying the natural barrier, thus requiring refrigeration.

Yeah, that was dumb in the end, but whatchagonnado? Okay, let’s do this: advice from a 1 1/2 year minivanlifer (currently in apt): you have to think this thing through. Don’t think "food," think Nutrition, or what is it that my body needs, not my mind, the basics. 1-your body does not need Breakfast, Lunch, Dinner, as those were created by a society you no longer belong to. You’re now a Survivalist (yea!), so you have to listen to your body and only eat when Hungry. You’re going to learn to fast when your body says, hey, you know what, it’s almost bedtime (sleep only when tired, no matter when) and I’m still not Hungry. Let’s sleep and see what Breakfa…. Oops, when my body signals it needs nutrition. You got that. From here on its a battle between your Mind and your Gut. If the Gut wins, the compulsive B,L,D regimen vanishes. You and your body are now Free. Next is the question what you need to survive, and that is our ancestral food source: Water, Nuts, Seeds, Veg, Fruit, Eggs, Fish, Meat, and if you go vegan, not even the last 3. When shopping you will no longer buy packaged foods that come from factories where much nutrition gets lost in processing. Now not only will your dollar go further, your body starts functioning optimally, which means, a soft stool, less backup in the intestine, less energy spent on reprocessing junk and more energy for vitality. Why not go organic too and banish all the big brands? Lastly, you have that nice collapsible step. Place it upside down, stretch 2 bags over its legs, squat and poop. You don’t need a "toilet." Squatting is the perfect way to align your lower intestine with the point of exit. Totally ancestral, girl. You go! Next time: funding your journey. Aloha
Thank you! I actually became a vegetarian when I was 14-15 and held that diet for approximately 8 years. So my studies on nutrition started when I was young. I agree with everything you’ve said and I already practice these things, including intuitive eating as you explained. When I’m budgeting, I make sure to cook full meals because I find it cheaper to throw a bunch of foods into a pan and make a big ready-made meal. I also already 95% of the time only shop on the perimeter of the grocery stores (I’m sure you already know that rule since you seem knowledgeable), which is what I’ve been doing since a teenager. Every now and then I do like to get that Kraft Mac & cheese though. 😏 As far as squatting, I do that in the woods when it’s available. If I go into a building, I usually take my collapsible stool with me to use as a squatty potty because most places have tall ADA-compliant toilets and my body doesn’t know how to work anymore without lifting my knees up. Hahahaha

I know electric is kinda annoying but I use a Ninja Foodie Grill, it's an all in one grill oven air fryer, and wow, I can make anything! I eat so good simply bc of that thing. It's 1800 watts of AC power, so as long as you have a 2kw inverter you can use it, and it cooks so good it's totally worth running the engine for it. Hope that helps and I so know the strug
I’ve been considering getting an air fryer. I used one at my friend’s house and loved it. Surprised it was less than 2k. My inverter is 2k ☺️

Somebody mentioned this in a comment reply, but I thought it might be useful to have in a main comment. It's not whether or not the eggs have been refrigerated before that determines whether you have to keep them refrigerated. It's whether the eggs have previously been washed. If you get them from a farm and they haven't washed them yet, you're good to let them sit out. But if they did wash the eggs, put them in the fridge. The cuticle has most likely been removed, which means the shell is now permeable.

@@NikkiJabs The US is one of the few countries that washes eggs, and it's entirely because of FDA/USDA requirements. If the eggs aren't coming from a commercial processor, they probably won't be washed. When we lived in England, we couldn't find the eggs the first time we went to the grocery store! They were just sitting on a shelf in the middle of the store. In the 2+ years we lived there, we couldn't shake the American habit of refrigerating our eggs when we got them home. I have read that refrigeration gets you 45 days vs 30, but who the hell has eggs sitting around that long?

I definitely visit our local Farmers Market once a week to get farm fresh veggies, meat and eggs. I like giving my money to the Farmers instead of big box chain grocery stores. Good job, looks yummy!

Farmer markets and fruit / veggie stands are great. You made some great looking food there. It's great to see some actual meat and eggs in your videos. I follow quite a few van lifers / skoolie youtubers and they all seem to be Vegans. They are always like "oooooh, this Tofu tastes amazing!" Yeah, OK 🙄 - Oh, and keep up the blabbing - it's the perfect amount.

Hi Nikki. It's funny that you have mentioned about the eggs. I had just spoken with a friend about eggs and meats in the US compared with other countries.
Ohh what did you learn?
@@NikkiJabsmost countries and small local farmers do not pastorize (heat in very high temperatures quickly and cool off really rapidly) eggs and meats, but large food processor companies in the US pastorize eggs and meats. Pastorization kills harmful bacteria, but pastorized foods need to be refrigeratored immediately, as non-pastorized do not, however non-pastorized food must be well cooked to kill harmful bacteria/parasites. Non-pastorized meats (especially chicken and fish) can be very dangerous if not well cooked. Enough of me freaking out everybody. Just cook the food well (160-189 degrees inside of the meat, depending on the type of meat), make it taste delicious, eat it , and save me a piece😋

That mushroom umami seasoning from TJs is so good! I add it to almost everything. If you happen to be near one, give Aldi a try for a smaller grocery bill. Some things there can be a miss but most of their products are quality and the most budget friendly.
Please continue your research about eggs and refrigeration. What makes fresh eggs shelf stable is a natural coating that is washed off before they are sold in the US. I'm sure the temperature thing is also true, but not the whole story. Be safe out there!

Your meals look pretty damn good for being on a tight budget. Much, much better than the pre-prepared garbage and cheaper too!
My money saving tip for thrifty van traveling would be Lentils! Dried Lentils are super cheap, store well and can be added to just about anything (Salads, tacos, soups, et). You can cook them about once per week to make things easier and store them in a cooler or freezer.
I’ve never tried dried lentils! Thanks for the info. I’ll try to incorporate it next time. I’m on Day 7 of these budget meals, so it’s time for another grocery stop.

I'm from England and found it odd in America people put eggs and butter in their fridge. Same with most vegetables. Always. Put them in my wire baskets, bowel and butter dish on my kitchen countertop.

I also put my butter on the counter so it’s always soft…. However, I’ve dated multiple men (the closest you get to roommates, you know?) who would constantly put my butter in the fridge. It drove me CRAZY. I don’t understand why anyone wants hard butter tearing up their freakin’ toast

Farmer's Market groceries are definitely worth the money , if you go to the Flea market in Fort Myers right before they close the lady there will hook you up and just throw in a bunch of freebies if you're nice and you'll get more than you can handle! The parking is free too fyi.
