    What kind of cheese did you use?

      It’s called stracchino or crescenza or may be labelled as both and is the traditional cheese for this dish. Brie, Camembert or taleggio also work (with any rind removed). Technically you could grate up Edam or Gouda or and use half mozzarella and that combo would also work a treat.
