I wanted to recreate those sweet memories for my son, but with a healthier twist. No added preservatives, inflammatory oils, or "natural flavors" -just wholesome ingredients that I feel good about giving him. INGREDIENTS
▢ 1 ½ cups whole wheat flour
▢ 1 ½ cups all-purpose flour
▢ 1 teaspoon baking powder
▢ ½ teaspoon baking soda
▢ ¾ teaspoon coarse salt
▢ ¾ teaspoon ground cinnamon
▢ ½ teaspoon freshly grated nutmeg
▢ ½ cup unsalted butter , at room temperature
▢ ⅓ cup packed light or dark brown sugar
▢ ⅓ cup honey
▢ 1 teaspoon vanilla extract
▢ ½ cup heavy cream
▢ Coarse sugar , for sprinkling (optional)
DIRECTIONS
1. In a bowl, whisk together whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
2. In a stand mixer or large bowl with a hand mixer, beat butter, brown sugar, honey, and vanilla until pale and creamy.
3. Add the flour mixture in 4 parts, alternating with the heavy cream, scraping the bowl between each addition.
4. Divide the dough into two portions and shape into rectangular disks. Wrap in plastic and chill for at least 2 hours, or up to several days.
5. When ready to bake, preheat the oven to 350°F and line a sheet pan with parchment paper.
6. Roll one disk of dough at a time into a 1/8-inch thick rectangle. Cut into 3-inch squares to get that perfect graham cracker measurement, or you can have fun with it and use cookie cutters to create unique graham cracker shapes.
7. Place squares on the sheet pan, 1/4 inch apart, and sprinkle with coarse sugar if desired.
8.Bake for 12 minutes, until edges are lightly brown. Cool on the pan for 5 minutes, then transfer to a wire rack.
9. Store graham crackers in an airtight container at room temperature for 1-2 weeks.
