maybe your oven temperature is high .. or next time you can try keepi g the pizza on a separate smaller tray and then place that on you oven rack ... hope this helps :)

It's a range because depending on how humid the room is and the quality of your flour, the water you need varies. Also, one trick is to keep kneading, flour is a fickle fellow.
this sauce should be pan fried to get a thicker consistency, so that your pizza has more flavour and better texture. Its a choice to peel and seed the tomatoes, doing it will make a smooth sauce and doesn't affect the taste of the pizza.
