The roll needs to be toasted or a firmer type of roll. Those fluffy white rolls are going to turn to mush and fall apart very quickly. Why put cayenne pepper in that awful cheese sauce? Just why?
I think they use canola oil because it probably is less likely to burn the way butter does. This is semi-homemade, which means it is reaching a varying grade of experience. Butter is a fat through which to cook the flour. Canola oil probably is less likely to scorch if someone goes too far when cooking? That's my guess. It also might be cheaper than butter.
You can make a roux with any fat+flour. Butter is obviously tastier and the traditional fat to make béchamel or besciamella. But speaking from experience, oil works just fine.
She should make Chicago style hot dogs. Step 1: Top a hot dog with tomato wedges, neon green relish, a pickle, sport peppers, mustard and celery salt, all on a steamed poppy seed bun. Step 2: Shoot anyone who puts ketchup on it.
